Job Title:Culinary Service Manager

Reports To:Director of Culinary Services

Overview of Position: This seasonal management position is responsible for the oversight of the 500-seat cafeteria and 20 staff members during the winter season. The Mountain Express is a million dollar operation during the winter months; high business volume on weekends and during holiday weeks paired with lower volume business days during the week. The manager is responsible for overseeing the daily operations, including employee management, work schedules, inventory, ordering, prep and staffing during these periods of inconsistent business in both the cafeteria and outdoor BBQ location.

Job Duties: The list below best represents many of the tasks you will be asked to perform at some time during your employment at Windham Mountain Resort. This list of duties is not intended to represent all of the tasks you may be asked to perform; however, Windham Mountain Resort will never require you to perform a task that is inherently unsafe or that you are not adequately trained to perform.

 Perform management functions including the recruiting, hiring, reviewing, and terminating staff

 Needs to be proficient at menu costing and planning.

 Maintain and control inventory of stock; anticipate busy and slow times of the year.

 Needs to understand profit and loss statements and profit margins.

 Manage a staff training program

 Oversee the operations of Mountain Express and smaller line outlets.

 Manage staff scheduling and payroll, and any other personnel issues that may arise.

 Work closely with staff to supervise and assist in overall day-to-day operations.

 Be visible and available to both guests and staff, and interact with guests to ensure satisfaction.

 Investigate and resolve customers’ complaints about food quality or service.

 Manage staff fairly; demonstrate excellent leadership behavior and high levels of professionalism.

 Manage vendor relationships, order and receive deliveries, store, and rotate all stock.

 Needs to know how to work at any or all the following stations: grill, fryer, steam table, pizza, drink, desserts, deli, baking, etc.

 Manage the line with proper products to ensure a smooth working line.

 Maintain food service and production levels -- ensure that food is prepared and served in the appropriate quantity and with the utmost quality

 Perform other duties as assigned.

Job Qualifications:

 Must be innovative and open-minded about improving the operation of the department.

 Must have 5 years of restaurant management experience in a high-volume environment.

 Must have superior leadership, management and interpersonal skills.

 Must be comfortable interacting with both staff and guests in a friendly and helpful manner.

 Must be able to handle a stressful, noisy and crowded work environment.

 Must be able to independently evaluate situations and make quick decisions.

 Must have strong communication skills, written and verbal.

 Must be able to regularly lift up to 50 pounds and to remain standing for an entire work shift.

 Must have strong computer skills, including proficiency in Microsoft Excel and Outlook.

 Ability to manage personnel and meet financial targets

 Must have or obtain TIPS certification and Serve Safe certification.

Work Schedule and Conditions: We are in the business of providing a quality product and experience for our guests. Traditionally our busy periods are during weekends and holiday periods which you will be expected to work. You can also expect to be asked to work extra hours or days on occasion, especially during the holiday periods. We will attempt to offer consecutive days off and accommodate special scheduling requests, but we cannot guarantee that we will be able to satisfy all requests. We expect employees to arrive promptly.

 Name Tag must always be worn – no exceptions.

 Casual business attire.
