Collaborative Class Proposal Outline

Topic: “16th century cuisine, the birth of modern cookery”

Purpose of this Class: to investigate the seeds of modern technique and recipes in 16th century cooking texts.

Premise: In a collaborative setting, discuss how the 16th century set the techniques and tone for subsequent cooking methods in pastries, vegetable cookery, baking and more.

Class Proposal Topics;

15-20 minute presentation with 5-10 minute discussion to follow, if your proposal is accepted you will become part of the panel.

1)  16th century Italian Cookery

2)  16th century English cookery

3)  16th century French/German cookery

Deadline for Submission of Proposal- Sept 1, 2015- Only 4 classes will be taught in this collaborative class. You may be asked to participate as a contributing panel member even if your class is not chosen to be presented. You will be advised of approval to teach this proposed class/topic by Sept 15th, 2015.

These notes will be saved and shared, on CD or in electronic proceedings and will be made available for 6 weeks after the close of the event. Note that completed class notes are expected by Oct 15, 2015
