- Food/Beverage Manager
- Job Summary
- Responsible for all food and beverage production and service for the club. Directly supervises the Bar Manager and all floor staff including bartenders. Plans and implements budgets, hires, trains and supervises subordinates and applies relevant marketing principles to assure that the wants and needs of club members and guests are consistently exceeded. Ensures that a monthly and accurate inventory of all beverages has been taken and an extension of total inventory has been reported to club accountant/controller within three days of count.

- Must have a current alcohol server’slicense or obtain one within 30 days of hire.
- Develops an operating budget for each of the departments revenue outlets; after approval, monitors and takes corrective action as necessary to assure that the budgets sales and cost goals are attained
- Maintains responsibility for sales, expenses and profit goals as outlined in the food and beverage departments operating plans/budgets
- Possesses efficient computer knowledge and ClubSoft operations.
- Assures that effective orientation and training for new staff and professional development activities for experienced staff are implemented as well as ongoing training for service and bar production personnel
- Inspects to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met
- Assures that all standard operating procedures for sales and cost control are in place and consistently utilized
- Helps plan and approve external and internal marketing and sales promotion activities for the food operation as well as effectively promotes them
- Helps plan and approve the organizational chart, staffing and scheduling procedures and job descriptions/specification for all department staff
- Manages the long range staffing needs of the department
- Watches all aspects of front of house to represent a clean and positive atmosphere.
- Assists in menu development proposed by the executive chef for all outlets and special events
- Ensures that all legal requirements are consistently adhered to, including wage and hour and federal, stateand/or local laws pertaining to alcoholic beverages
- Researches new products and develops an analysis of the cost/profit benefits
- Maintains documentation of food and beverage personnel records
- Implements policies and procedures for food and beverage departments
- Monitors the ordering and receiving program for products and supplies to ensure proper quantity and price on all bar purchases
- Consults with the Executive Chef, Catering/Banquet Manager, Bar Manager to help assure the highest level of guest satisfaction at minimum cost
- Greets guests and oversees actual service on a routine, random basis
- Helps develop wine lists and bottle/glass wine sales promotion programs
- Insures Beverage costs do not exceed 33%
- Supervises and maintains par levels of inventory to maximize cash flow.
- Continually works to ensure correct handling procedures to minimize china and glassware breakage and food waste
- Personally handles selected member and guest complaints and advises the general manager and executive chef about appropriate corrective actions taken
- Assists in planning and implementing of procedures for special club events and banquet functions
- Oversees scheduling to maintain proper staff hours and coverage
- Oversees Food/Beverage website to maintain up-to-date information
- Maintains up-to-date information and correct functioning of ClubSoft System as it pertains to Food/Beverage Operations
- Reports to scheduled Tuesday staff meetings at 9:30
