Salmon and stir fry vegetables

What you need

Salmon

New potatoes

Vegetables for stir-frying: - any combination of carrot, onion, courgette, leek, peppers, mushrooms, baby corn etc

Soy Sauce

Garlic

A little lemon juice.

What You Do

Pre-heat oven to gas mark 4/ 180°c/350°F

Put the new potatoes on to boil.

Brush salmon fillet with a little oil, soy sauce and lemon juice.

Place salmon on a baking tray and cover with some foil, bake for approx. 20 minutes.

Prepare vegetables into thin slices for stir-frying

5 minutes before fish is ready stir-fry vegetables in a little polyunsaturated oil, add a crushed garlic clove and a couple of dashes of soy sauce!

Plate up baked salmon, new potatoes and freshly fried vegetables.
