Learning Target: Students will become familiar with the types of restaurants, the business structures and the basic organization of a restaurant management and staff.

Monday, September 15th

  • Students will discuss the recent elimination of the Food Truck from The Great Food Truck Race
  • Students will begin Restaurant Organization ppt. notes and discussion

Tuesday, Sept. 16th

  • Students will receive an index card upon arrival. Each card has a term written on it. Students will remain standing until they can define or describe the term on their card. Cards with paper clips have more than one definition/description.
  • Students will watch Small Business Diaries – Growing and Changing
  • Students will complete the Small Business Diaries – Growing and Changing worksheet
  • Students will continue Restaurant Organization ppt. notes and discussion
  • Students will complete the Restaurant Organization Flowchart

Wednesday, Sept. 17th

  • Students will complete the Escoffier’s Kitchen Brigade worksheet
  • Students will complete The Responsibilities of the General Manager worksheet
  • Students will complete The Restaurant Industry Illustrated Vocabulary worksheet

Friday, September 19th

  • Students will take the Front and Back of the House Open Notebook Quiz
  • Students will complete the Professional Kitchen Layout worksheet with the instructor
  • Teach Functions of Food Service

Monday, September 22nd Carolyn will sub CTE Advisory Mtg

  • Stacey and Alli will come discuss DECA membership with students
  • Students will discuss the recent elimination of the Food Truck from The Great Food Truck Race
  • Students will watch Big Mac: The Inside Story of McDonalds and complete the coordinating worksheet

Tuesday, Sept. 25th

  • Students will complete the viewing of the McDonald’s video and their worksheet

Wednesday, Sept. 24th

  • Complete remaining ppt slides about quality and costs/profit
  • Food and Beverage Trends
  • BINGO as a test review
  • 3 teams, each team receives a set of cards, each team puts a person in a chair in the center of the room. I call the definition and the team locates the correct card first and runs it to their team mate in the chair. First center person to stand and say the correct term wins the point.

Friday, Sept 26th

  • Unit 2 Test

Monday, Sept. 29th

  • Students will watch and discuss the last episode of The Great Food Truck Race

Tuesday, Sept. 30th
