Whole Wheat Honey Oatmeal Bread

Recipe is for 8 loaves---half recipe—4 loaves—is in paretheses

Directions:

  1. Put 2 c. water (1 c.) and 1 cup oatmeal (1/2 c.) in a large bowl or 8 c. measuring c. Microwave on high at 70% for 5 minutes. Cool to 110% or lower.
  2. Put 6 c. warm water (3 c.) in a mixing bowl. Add: ½ c brown sugar (1/4 c) and ¼ c yeast (2 T). Let stand for 5 minutes until the yeast gets bubbly.
  3. While yeast bubbles, grind 12 c. of whole wheat (6 c) plus 3 (2) 500 mg vitamin C tablets (dough enhancer!) to make 20 c (10 c) of whole wheat flour.
  4. Add to yeast mixture the following: ¼ c oil (2T), ½ c honey(1/4 c), ¼ c butter(2T), 3 eggs(2 eggs), 2 c. granulated powdered milk (1 c)*, 1 c gluten flour (1/2 c) (optional but nice!), 2 ½ T salt (1 heaping T), cooked oatmeal, and 6 c (3 c) of the whole wheat flour. Run mixer until this is very smooth.
  5. Add the rest of the whole wheat flour until dough doesn’t stick to the bowl anymore. Don’t let the dough get too dry! Then kenad this for 5 minutes by mixer or 10 minutes by hand.
  6. Put dough into a greased bowl. Let rise till doubled (30-45 minutes).
  7. Turn dough onto floured surface. Divide into 8 (4). Form loaves. Let rise in oven which has been preheated to 150 degrees then TURNED OFF!
  8. After about 20-30 minutes, turn the oven on to 325 deg (convection if you have it!) (DON’T OPEN THE OVEN BEFORE TURNING ON1) And set your timer for 30-35 minutes! It will preheat and cook your bread perfectly!

* Or 1 c (½ c) find powdered milk


Multi-Grain Bread

This is a heartier bread.

Directions:

1.Put 2 c water and 1 c oatmeal (can use 6 grain rolled cereal) in a large bowl or 8 c measuring c. Microwave on high for 5 minutes. Cool to 110 degrees.

2. Put 6 c HOT water in a mixing bowl, add: 2 c 9 grain cracked cereal, 1 c sunflower seeds, ½ c flax seeds, 1/3 c sesame seeds, 1/3 c millet. Soak for ½ hour.

3. Then add ½ c brown sugar and ¼ c yeast. Let stand for 5 minutes until the yeast bubbles.

4. While yeast bubbles, grind 8 c of whole wheat to make 12 c of whole wheat flour. At this point you may add 3 500 mg tablets of vitamin C to your grinder. This acts as a dough enhancer!

5. Add to yeast mixture: ¼ c oil, ½ c honey, ¼ c butter, 3 eggs, 1 c powdered milk, 1 c gluten flour, 3 scant T salt, cooked oatmeal, and 6 c of the whole wheat flour. Run mixer until very smooth.

6. Add whole wheat flour or blend of whole wheat and white flour, until dough doesn’t stick to the bowl anymore (about 14-16 c total). Dough needs to be slightly sticky as seeds will absorb water in cooking! Then knead this for a total of 10 min. from the time you started adding flour.

7. Put dough into a greased bowl. Let rise till double. 30-45 minutes.

8. Turn dough onto floured surface. Divide into 8. Form loaves. Let rise in a warm oven for 35-45 minutes. Without peeking or opening oven, turn oven on and let heat up to 350 degrees.

9. Bake at 350 degrees for a total of 25-30 minutes from time you turned on oven.
