Quick, Easy, and Healthy Apple Recipes

Check out these healthy recipes that incorporate more apples into your diet! They are simple and can all be made in 10 minutes or less—most are even dorm-room friendly!

Breakfast

Apple Peanut Butter Banana Shake

-1 large apple, chopped

-1 cup milk (skim, almond, soy, etc.)

-½ cup vanilla or plain yogurt

-1 tsp. sweetener of choice (sugar, honey, agave, maple syrup, ect.)

-1 tbsp. peanut butter

-1 banana (for thicker, milkshake consistency, use frozen banana)

-handful of ice (optional)

  1. Blend all ingredients and enjoy!

Apple Cinnamon Mug Cake

-1 egg

-1/2 apple, finely chopped

-3 tbsp. flour (wheat, almond meal, coconut, etc.)

-2 tbsp. walnuts, chopped

-2 tbsp. honey

-pinch of cinnamon

-pinch of salt

  1. Combine all ingredients in a microwave safe mug and stir them together
  2. Microwave for about 1 minute and 45 seconds to 2 minutes and enjoy!

Apple Cinnamon Oatmeal

-1 small apple (chopped)

-1/2 cup quick oats

-1 cup water (or less depending on your preferred consistency)

-1 tbsp. brown sugar

-1/4 tsp. cinnamon

-maple syrup or honey (optional)

  1. Mix apple, oats, water, brown sugar and cinnamon in a microwave-safe bowl
  2. Microwave for 2 minutes
  3. Stir and drizzle maple syrup or honey for an added sweetener and enjoy!

Lunch/Dinner

Chicken, Cranberry, & Apple Salad

-2 cups of greens (kale, spinach, arugula, etc.)

-1 green apple (chopped)

-1/4 cup dried cranberries

-1/4 cup walnuts

¼ cup crumbled feta cheese

-1 chicken breast

-balsamic vinaigrette dressing or apple cider vinegar (desired amount)

  1. Toss greens, chicken, chopped apples, cranberries, walnuts, and feta cheese together
  2. Add in desired amount of dressing and enjoy!

Apple Quinoa and Kale Salad

-1/2 cup cooked quinoa

-1 tbsp. olive oil

-juice of ¼ lemon

-sea salt and black pepper (to taste)

-1 cup chopped kale

-1 apple (chopped)

-1/4 cup goat cheese

  1. Mix olive oil, lemon juice, sea salt, and pepper in a small bowl for the dressing
  2. Mix apple, kale, and goat cheese
  3. Toss salad with dressing and enjoy!

Apple Peanut Butter Sandwich

-2 pieces of whole wheat bread

-peanut butter (natural peanut butter, almond butter, cashew butter, etc.)

-1/2 apple

  1. Cut apple into thin slices
  2. Spread peanut butter on both pieces of bread
  3. Place apple slices on one piece of bread, top with the other piece of bread and enjoy!

Dessert

3-Minute Apple Crisp

-1 apple (chopped)

-2 tbsp. quick oats

-2 tbsp. flour

-1/2 tbsp. brown sugar

-1 tbsp. melted butter

-pinch of cinnamon

-vanillagreek yogurt or vanilla frozen yogurt (optional)

  1. Mix oats, flour, brown sugar, melted butter and cinnamon
  2. Put chopped apple in a microwavable mug, cover and microwave for 30 seconds
  3. Mix in oats mixture and make for 1 minute, then 30 seconds, then another 30 seconds (total of 2 min and 30 seconds)
  4. Top with vanilla greek yogurt or vanilla frozen yogurt if desired and enjoy!

Caramel Apple Rings

-1 apple

-2 tbsp. caramel

-handful of chopped nuts

  1. Cut apple into ring slices
  2. Spread a thin layer of caramel on each ring
  3. Top with chopped nuts and enjoy!
