HERR'S® Crab Cakes

Made with Herr's® Old Bay Potato Chips and Salsa

Ingredients

*2 cups backfin crab meat (about 3⁄4 lb.), picked over

*1⁄2 cup fresh bread crumbs

*1⁄2 cup Herr's® Old Bay Potato Chips

*2 large eggs

*1⁄2 cup heavy cream

*A dash of hot sauce

*2 tsp Worcestershire sauce

*2 tsp chopped fresh parsley leaves

*2 tsp grated onion

*2 tbsp unsalted butter

*3⁄4 cup Herr's® Medium Salsa

Directions

In a bowl, combine crab meat, bread crumbs, and chips. In a separate bowl, whisk together eggs and cream. Add cream mixture, hot sauce, Worcestershire sauce, parsley, onion, salt and pepper to taste to crab mixture and combine as well. In a large heavy skillet, heat 1 tbsp. clarified butter and into it drop crab mixture by tablespoons. Cook crab cakes until golden brown, about 2 minutes on each side. Serve crab cakes warm with 1 tbsp each of Herr's® salsa for dipping. Make 24 small crab cakes.

Meat Loaf

Made with Herr's® Pretzel Thins

Ingredients

*1 cup freshly made breadcrumbs

*1 cup pureed Herr's® pretzel thins

*1 onion, minced

*2 cloves garlic, minced

*2 eggs, slightly beaten

*1 lb ground beef

*2/3 lb ground veal

*1/3 lb ground pork

*2 tbsp Worcestershire sauce

*1 1⁄2 tsp dry mustard

*1⁄2 tsp freshly ground pepper

*1⁄4 cup milk

*1⁄2 cup Herr's mild salsa

Directions

Preheat the oven to 325xF. Butter the loaf pan. Combine all the ingredients in a large bowl; pat into the loaf pan and bake for 30 minutes. Pour 1⁄2 cup mild salsa over the top; bake for another 15 minutes. Remove from oven and allow to rest for 5 minutes. Slice, and serve.

Oven Fried Chicken
Made with Herr's Sour Cream & Onion Potato Chips

3 lbs. Boneless/skinless chicken breasts
1/2 cup Butter, melted
2 cups Crushed Herr's Sour Cream & Onion Potato Chips / 1/4 tsp. Garlic salt
Dash of pepper
Preheat oven to 375 degrees. Cut Chicken into bite size pieces. Dip chicken in melted butter and then roll in mixture of crushed chips, garlic salt, and pepper. Place chicken (not touching) in large, greased, shallow baking pan. Sprinkle with remaining butter and chip mixture. Bake for 1 hour or until done. Do not turn. Cover with foil for the first 1/2 hour.

El Dorado Casserole
Made with Herr's White Corn Tortilla Chips

13 oz. Herr's White Corn Tortilla Chips
1 pound ground beef
1/2 cup chopped onion
1/8 teaspoon garlic powder
2 cans (8 oz. each) tomato sauce / 1 pint sour cream
1 pint cottage cheese
8 ounces diced chilies
1 package (8 oz) grated Monterey Jack cheese
1 tablespoon oil
Brown the cook for 10 minutes. Mix sour cream,
cottage cheese, and chilies. Line a greased casserole dish
(9 x 13 inches) with crushed Herr's White Corn Tortilla Chips.
Add in layers of half the meat mixture, half the cream
mixture, and half of the Monterey Jack cheese. Repeat layers.
Bake at 350 degrees ground beef, onion and garlic powder in oil. Add
tomato sauce and for 30 - 40 minutes. Serves 5 - 6.

Cajun Fried Chicken Salad
Made with Herr's Red Hot Potato Chips

1/3 cup sherry vinegar
2 tbsp. Creole mustard
1 cup olive oil
1/2 tsp. salt
1/4 tsp. black pepper, cracked
1/2 cup flour
1 egg, lightly beaten
1/4 cup milk / 8 oz. Herr's Red Hot Potato Chips, crushed
4 chick breasts, skinned, boned and cubed
4 cups peanut oil
10 oz. spring mix
2 ripe tomatoes, seeded and quartered
1/2 cucumber, peeled and sliced
1/2 red onion, sliced
2 eggs, hard boiled and quartered
For dressing, mix vinegar and mustard. Whisk in olive oil. Season with salt, pepper and cheese. Reserve.
For chicken, mix salt, pepper and flour. Mix egg and milk. Dredge chicken pieces in flour mix, egg mix and then potato chips.
Pan fry chicken in peanut oil. Drain and reserve. Toss chicken with 1/2 cup dressing. Toss spring mix, tomatoes, cucumbers, and onions with 1 cup dressing. Plate salad and place chicken on top.
Garnish with eggs. Serves 4.

OJanet Bjostad's Taco Salad
Made with Herr's White Corn Tortilla Chips

1 lb. Ground beef
1 can Dark red kidney beans
1 jar Herr's Salsa Dip
2 tbsp. Chili powder
1 can Herr's Nacho Cheese Dip / 1 head Iceberg lettuce, shredded
10 oz. Herr's White Corn Tortilla Chips
Brown beef in skillet and drain fat. Add beans, salsa dip, and chili powder Simmer, uncovered, for 15 minutes. Cover plate with white corn tortilla chips. Place shredded lettuce on top of chips and spread with meat mixture. Top with cheese dip Serves 4.

Crunchy Turkey Sandwich
Made with Herr's Sour Cream and Onion Potato Chips

2 pieces of white bread
3 slices of turkey / Miracle Whip
Herr's Sour Cream & Onion Potato Chips
Liberally spread Miracle Whip on bread, put turkey slices on one slice of bread and then place chips on top of the turkey. Top chips with other slice of bread and "smush down"! Now you have a "Crunchy Turkey Sandwich".

Chicken Salad Casserole
Made with Herr's Potato Chips

4 cups cooked chicken, cubed
4 cups celery, diced
2 cups onions, chopped fine
1 cup toasted almonds (slivered, blanched)
2 cups mayonnaise
4 tbsp lemon juice
1 tsp salt
1 tsp Accent / Topping:
1 cup American cheese, shredded
2 cups Herr's Potato Chips, crushed
Combine ingredients. Put in a 9" x 13" casserole. Top with cheese and potato chips
Bake at 425 degrees 15 minutes or until cooked through. Serves 10.

Herr's Potato Chip Quiche Lorraine
Made with Herr's Regular Potato Chips

1 1/2 cups finely crushed Herr's Regular Potato Chips
1 teaspoon paprika
1 cup half and half
1 cup whipping cream
3 eggs, beaten / 1/4 pound bacon, cooked crisp and crumbled
2 tablespoons sliced green onions
1/4 teaspoon salt
Dash each pepper and nutmeg
2 cups grated Swiss cheese
Combine Herr's Potato Chips and paprika. Gently press into bottom and 1 1/2 inches up sides of 8 inch spring form pan. In saucepan warm half and half and cream; beat into eggs to blend. Stir in remaining ingredients. Pour into crust. Bake in 375 degree oven 30 to 35 minutes, until crust is set and golden. Serves 6.

Tex-Mex Fried Pies
Made with Herr's Regular Potato Chips

Crust
2 cups flour
1/2 teaspoon Salt
1 cup Cheddar cheese
2/3 cup shortening
5 to 6 tablespoons of water
Filling
1 pound ground beef
1 medium size onion / 1/3 cup finely chopped red bell pepper
1/3 cup finely chopped green bell pepper1/4 cup picante sauce
1/2 cup finely crushed Herr's Potato Chips
1 package (1 1/4 ounces) taco seasoning mix
1 cup shredded Cheddar cheese
1/4 teaspoon Garlic powder (or 1 garlic clove, minced)
1 egg beaten with 1 tablespoon water
Oil for frying
To make the crust, place the flour, salt and cheese in a food processor. Add the shortening and process for 15 seconds. Sprinkle the water through the food chute on the food processor, 1 tablespoon at a time, just until dough forms. Shape into a ball
and divide in half. Chill for 30 minutes. Roll and cut into 4-to 5-inch circles, about a dozen.
To make the filling, put the ground beef in a large skillet and sauté until almost cooked. Add the onion and green and red peppers. Continue to cook until the meat is done and the onion is translucent. Stir in the picante sauce, Herr's potato chips, taco seasoning mix, cheese and garlic. Cook until heated through. Let the mixture cool
slightly before filling the pastries. Place a little filling in the center of each pastry circle. Brush the edges of the dough with the egg-water mixture. Fold the dough over the filling, seal, and crimp with the tines of a fork. Heat 1/4 inch oil in a large skillet and fry the pastries until lightly browned, about 2 minutes per side. Serve hot. Makes 12 pies.

Herr's Crispy-Topped Ravioli Casserole
Made with Herr's Corn Chips

1 can (40 oz.) beef ravioli
6 slices crisp brown bacon
4 slices American cheese / 3/4 cup crumbled Herr's Corn Chips
Place half of beef ravioli in shallow casserole. Crumble bacon, sprinkle over ravioli. Cut cheese in small squares. Arrange half over casserole. Layer with remaining ravioli and cheese. Top with Herr's Corn Chips. Bake in 400 degree oven for 25 to 30 minutes. Serves 5 - 6.

Mary Szczpanik's Deluxe Fajita Nachos
Made with Herr's White Corn Tortilla Chips

2 1/2 cups Shredded cooked chicken
1 pkg. Lawry's spice and seasoning for fajitas (1.27 oz.)
1/3 cup Water
13 oz. Herr's White Corn Tortilla Chips
5 oz. Shredded cheddar cheese / 4 oz. Shredded Monterey Jack cheese
1 large tomato, chipped
1 can Sliced pitted ripe olives, drained
1/4 cup Sliced green onions
1 jar Herr's Salsa
In a medium skillet, combine chicken, spice and seasoning for fajitas, and water. Blend well. After bringing to a boil, reduce heat and simmer 3 minutes. Arrange chips on a large, shallow, ovenproof platter. Top with chicken mixture and cheeses. Place
under broiler to melt cheeses. Top with tomato, olives, green onions, and salsa. (If desired, garnish with guacamole and sour cream. For a spicier version, add sliced jalapenos.)
Serves 4 appetizers or 2 entrees.

Ketchup-Chip Grilled Cheese Sandwich
Made with Herr's Ketchup Potato Chips

2 slices of white bread, lightly buttered
3-4 slices of cheddar or American Cheese
Approximately 12 Herr's Ketchup Potato Chips
Dash of black pepper
This is a great spin on a regular grilled cheese sandwich. Alternate thin layers of cheese and Herr's Ketchup chips. Grill sandwich, and enjoy!

Bodacious BBQ Potato Chip Burgers
Made with Herr's BBQ Potato Chips

  • 1 lb ground beef
  • 4 oz. can of evaporated milk
  • 1 envelope dried onion dip mix
  • 3/4 cup finely crushed Herr's BBQ Potato Chips (or your favorite flavor of Herr's Chips)

In large mixing bowl, combine ground beef and evaporated milk. Add the onion soup mix and crushed potato chips and stir. Mold into approximately 6 patties and grill or broil.

Hot Chicken Salad
Made with Herr's Regular Potato Chips

2 cups Chicken, cooked and cubed
2 cups Celery, diced
1/2 cup Slivered, blanched almonds, toasted
1/2 tsp. Salt
1/2 tsp. Accent / 2 tsp. Onion, grated
2 tbsp. Lemon juice
1 cup Mayonnaise
1/2 cup Shredded American cheese
1 cup Herr's Regular Potato Chips
Preheat oven to 425 degrees. Combine all ingredients except sprinkle with cheese. Top with chips. Bake for 15 minutes or until heated through. Serves 5 to 6.

Anna Marie Czyzewicz-Farinelli's Salsa Chicken Tortilla
Made with Herr's White Corn Tortilla Chips

1 tbsp. Vegetable oil
1 lb. Boneless/skinless chicken breasts, cut into strips
1 jar Herr's Chunky Salsa
8 oz. Tomato sauce
16 oz. Whole kernel corn, drained / 4 oz. Chopped green chilies
1 1/2 tsp. Chili powder
1 tsp. Onion powder
13 oz. Herr's White Corn Tortilla Chips
Shredded cheddar cheese
Heat oil in large skillet over medium-high heat. Add chicken and cook 5 minutes, stirring frequently. Add salsa, tomato sauce, corn, chilies, chili powder, and onion powder. Bring to a boil. Reduce heat to medium-low and cook 10 minutes, stirring occasionally. To serve, spoon over tortilla chips and top with cheese. Serves 4.

Peter's Grilled Cajun Shrimp with Crunch Tortilla Crust
Made with Herr's White Corn Tortilla Chips

1/2 cup olive oil
2 tablespoons Cajun seasoning mix (store bought)
2 tablespoons fresh parsley, chopped
2 tablespoons fresh lemon juice
1 1/2 tablespoons honey
1 tablespoon soy sauce / 1/2 teaspoon cayenne pepper (or to taste)
1 pound large shrimp, peeled and deveined, tails left intact
1 package wooden skewers
2 cups Herr's White Corn Tortilla Chips, coarsely ground
Combine first seven ingredients in bowl and stir to blend. Add shrimp and gently mix to coat. Allow shrimp to marinate for one hour in refrigerator. Soak wooden skewers for 30 minutes in water. Preheat grill. Thread shrimp using 2 skewers. (This will prevent shrimp from turning over while on the grill). Grill until shrimp are pink and opaque, about 5 minutes. While shrimp is grilling, in a heavy small saucepan bring remaining marinade to a boil. Remove shrimp from grill, and remove from skewers if desired. Dip shrimp in marinade, and then roll shrimp in tortilla chips to coat. Transfer to plate and serve immediately.
Serves 4.

Vicki's Salsa Chip Meatloaf
Made with Herr's Potato Chips and Herr's Salsa

  • 2 lbs ground beef
  • 2 eggs
  • 1 large bag of Herr's Chips (any flavor, corn chips work very well also)
  • 1 large jar of Herr's salsa
  • 1 pound of shredded cheddar cheese

Crush the bag of chips into small pieces. Mix chips, salsa, cheese and eggs together with ground beef. Bake at 350* for aprox 1 hour. Top with glaze made from ketchup and brown sugar if desired.
