Olives from Spain Seamus Mullen Recipe
Mixed Olives from Spain Marinated with Ventresca Tuna, Avocado and Cherry Tomatoes on Rye Crackers
This simple dish combines a few great ingredients; simple dressed olives on a rye crisp make on an easy, quick and delicious new way to enjoy olives.
Special Equipment
· Microplane or sharp grater
Size
· Serves 4 as a small tapa
Ingredients
· 1 cup mixed dressed Olives from Spain – Manzanilla olives, Gordal olives, Black Ripe olives are recommended
· Rosemary
· Thyme
· Bay leaf
· 1 jar Ventresca canned tuna from Spain
· 1/2 cup cherry tomatoes, cut in half
· 1 semi-ripe avocado, cut into 1/2" pieces
· 1 clove garlic, grated on a microplane
· 1 tsp sherry vinegar
· zest and juice of 1 lemon
· Sliced lemon
· 2 TBSP fruity Olive oil from Spain
· A few leaves of fresh basil, torn into small pieces
· 4 Rye crisps or rye crackers
· Kosher salt
· Sprinkling of Spanish pimentón ahumado, or smoked Spanish paprika
To complete
· To create dressed Olives from Spain, combine rosemary, thyme, bay leaf and lemon slices to taste and let marinate overnight in the refrigerator.
· Combine all ingredients, except rye crackers and pimento, in a medium sized mixing bowl and gently fold together with a rubber spatula.
· Top each of the rye crackers with about two tablespoons of the mixture and finish with a sprinkling of pimentón. Enjoy immediately.
