CAST RESTAURANT AND BAR MANAGER

JOB DESCRIPTION

Responsible to:Head of Finance & Operations (Nottingham Playhouse)

Board of Nottingham Playhouse Trading Ltd

Responsible for:Head Chef, Assistant CAST Manager

Purpose of post:

  • To provide strategic management and leadership for CAST Restaurant and Bar
  • To provide line management to the Head Chef and Assistant CAST Manager,
  • To provide excellent FOH service to restaurant users and lead in the provision of first class bar services to Nottingham Playhouse customers.
  • To implement and develop the CAST Business Plan: driving the business forwards, attracting more customers and ensuring the relationship with Nottingham Playhouse is maximised to the full.
  • To ensure that all strands of CAST Bar and Restaurant work together to achieve maximum benefit for the company.

Duties include:

Business Development

  • To develop, with the head of Finance & Operations and the Nottingham Playhouse Trading Ltd Board, annual targets that will deliver the aims and objectives if the Business Plan.
  • To develop and promote CAST as a destination and pre-theatre venue.
  • To input into the development of all menus including food, drink, and presentation.
  • To develop a programme of CAST events focusing on food, music and entertainment that will increase trade on quiet nights.
  • To develop special events for Christmas, Valentine’s Day, Mother’s Day and other celebrations.
  • To maximise income generation from audiences at Nottingham Playhouse.
  • To work towards trading targets as agreed at the start of each year.
  • To work with Nottingham Playhouse Marketing Department to develop and deliver appropriate marketing for CAST.

Staff Management

  • To line manage the Head Chef and Assistant CAST Manager.
  • To provide leadership of the CAST team including managing, motivating and encouraging staff.
  • To carry out annual staff appraisals.
  • To recruit staff and carry out inductions to the business and job roles.

Operational

  • To prepare rotas ensuring efficient and appropriate staffing level are maintained .
  • To ensure adequate stocks are maintained: wet, dry and sundries, and to ensure excellent stock control.
  • To act as key holder, opening and closing CAST as required.
  • To ensure CAST is neat, tidy and well presented at all times and to ensure high standards of décor are maintained.
  • To provide weekly reports to Nottingham Playhouse and daily reports for senior management and the Chair of the Board.
  • To have an excellent working knowledge of the till system.

Customer Service

  • To play a key role in welcoming customers to CAST and to maintain a highly visible presence and identity as the front person of the organisation.
  • To maintain and deliver the highest standards of customer service and to ensure that the CAST team delivers the same to all customers of CAST and Nottingham Playhouse.
  • To deal with an customer complaint promptly and effectively, including any complaints or comments via social media and consumer sites, such as Trip Advisor.

Financial Management

  • To monitor income and expenditure against the targets and budgets agreed by the Board.
  • To manage the CAST budget in conjunction with Nottingham Playhouse Head of Finance & Operations.
  • To input into the preparation of the CAST budget by Nottingham Playhouse Head of Finance & Operations and its presentation to the Board.
  • To calculate Gross Profit margins on all products and to ensure agreed GP margins are met.
  • To ensure Nottingham Playhouse financial procedures are adhered to.
  • To maximise income and minimise expenditure wherever possible.

General Management

  • To prepare reports for, and to attend, Nottingham Playhouse Trading Ltd Board meetings.
  • To attend Nottingham Playhouse internal meetings as appropriate.
  • To be a Personal Licence Holder and ensure that CAST fulfils its duties in respect of its Premises Licence.
  • To ensure all company policies are implemented and observed.

General

  • To always act in the nest interests of Nottingham Playhouse Trading Ltd.

  • To agree to abide by Nottingham Playhouse policies such as Health & Safety, Child Protection and to ensure all statutory requirements are met.
  • To maintain confidentiality in all areas relating to Nottingham Playhouse Trading Ltd.
  • To carry out such other duties as may be reasonably expected of the post.
