Morrocan Lamb Pizza

Ingredients

Pizza Dough Topping

½ cup luke warm water 200 grams of morrocan spiced lamb

2 teaspoons instant dry yeast 3 tablespoons greek yoghurt

½ teaspoon sugar sprig of fresh mint

2 teaspoons oil 1 lemon

200 grams plain flour 1/2 cup of baby spinach

½ teaspoon salt 1 spanish onion

2 tablespoons of tomato paste

Method

1.  Preheat oven to maximum

2.  Make the dough. Place the water, yeast and sugar in a bowl and mix with a fork

3.  Leave for about 5 – 10 minutes until the mixture looks frothy

4.  Add 2 tablespoons of oil to the yeast mixture

5.  Weigh the flour, add salt and place in the mixing bowl

6.  Add the yeast and beat for 8 minutes

7.  Brush the inside of a large bowl with olive oil, place the dough in the bowl, cover with a dry clean tea towel and put aside for an hour

8.  Tip flour onto bench and knead, shape into a ball and return to bowl. Leave for 20 minutes

9.  Scatter flour onto bench and roll the dough to form a thin disc. Flour the pizza tray and then place dough onto the tray

1.  Make topping. Thinly slice lamb and cook in saucepan over moderate heat

2.  Spread tomato paste over pizza base and scatter lamb on top

3.  Slice onion, tear up spinach leaves and scatter over pizza base

4.  Place in oven and cook for 15 minutes

5.  Chop mint and mix in yoghurt. Drizzle over cooked pizza

6.  Squeeze a slice of lemon over whole pizza

7.  Slice and serve immediately


Chocolate Pizza

Ingredients

Pizza Dough Topping

½ cup luke warm water 100 grams milk cooking chocolate

2 teaspoons instant dry yeast 1 banana

½ teaspoon sugar 20 mini marshmallows

2 teaspoons oil ¼ cup of walnuts

200 grams plain flour ½ tablespoon butter

½ teaspoon salt 1 tablespoon sugar

1 tablespoon ground cinnamon

Method

1.  Preheat oven to maximum

1.  Make candied walnuts. Melt butter, sugar and cinnamon in a saucepan over low heat

2.  Roughly chop walnuts and toss into mixture

3.  Stir until mixture becomes tacky

4.  Place walnuts onto plate to cool

5.  Melt chocolate over water boiler. When completely melted, pour over pizza base

6.  Slice banana and place slices over chocolate then sprinkle marshmallows and candied walnuts over the pizza

7.  Slice and serve immediately

Prosciutto Pizza

2 teaspoons instant dry yeast ½ cup of rocket leaves

½ teaspoon sugar parmesan cheese

2 teaspoons oil tomato paste

200 grams plain flour 1 clove of garlic

½ teaspoon salt

3.  Leave for about 5 – 10 minutes until the mixture looks frothy

4.  Add 2 tablespoons of oil to the yeast mixture

1.  Crush garlic and mix into tomato paste then spread over pizza base

2.  Cut prosciutto into thin strips and scatter over pizza base

3.  Scatter rocket and grated parmesan cheese over base

4.  Place in over and cook for 15 minutes


Potato Pizza

2 teaspoons instant dry yeast 50 g of parmesan cheese

½ teaspoon sugar sprig of fresh rosemary

2 teaspoons oil ¼ cup olive oil

200 grams plain flour salt and pepper

½ teaspoon salt

Method

1.  Preheat oven to maximum

2.  Make the dough. Place the water, yeast and sugar in a bowl and mix with a fork

3.  Leave for about 5 – 10 minutes until the mixture looks frothy

4.  Add 2 tablespoons of oil to the yeast mixture

5.  Weigh the flour, add salt and place in the mixing bowl

6.  Add the yeast and beat for 8 minutes

7.  Brush the inside of a large bowl with olive oil, place the dough in the bowl, cover with a dry clean tea towel and put aside for an hour

1.  Make topping. Peel potatoes and thinly slice using vegetable slicer on grater

2.  Wash rosemary and strip needles from the stalk

3.  Place potato slices into a bowl, drizzle most of the oil over, add salt, pepper and rosemary. Mix until all potato is covered

4.  Arrange slices of potato over pizza base, overlapping as you go

5.  Grate the parmesan cheese and sprinkle over the pizza

6.  Drizzle the remaining olive oil over the pizza, place in the oven and cook for 15 minutes

7.  Sprinkle more parmesan

8.  Slice and serve immediately
