Minutes: Wellness Ambassador Subcommittee: Nutrition Initiatives Meeting

  1. Attendance: Bill Hanks, Robert Herrick, Karen Hosterman, Brenda Miller, Kim Mullen, Temple Pearson, Carmen Sheets, Susan White
  1. National Nutrition Month discussion
  2. National Nutrition Month is the American Dietetic Association’s annual campaign designed to focus attention on the importance of making healthy food choices and developing sound eating and physical activity habits. This year’s slogan is “Step Up To Nutrition and Health”
  1. Scheduled Workshop – March 8, 2006 in the WorkLife Classroom
  • Topic: “Ten Best Foods” – what are they and how can we include them in daily eating?
  • Fatty Fish (salmon, herring, etc.)
  • Nuts (almonds, walnuts pecans, etc.)
  • Whole Grains
  • Apples
  • Cruciferous vegetables (broccoli, cauliflower, cabbage, onions)
  • Legumes and beans (peanuts, lentils, black beans, etc.)
  • Blueberries
  • Tea
  • Sweet potatoes
  • Dark green leafy vegetables – spinach, kale, collards, etc.
  • Discussion ensued on ideas for this workshop. The plan is to begin collecting recipes for each food group listed above and to provide selected samples for participants attending the workshop. If you have any healthy recipes regarding the above foods, be sure to bring them with you on January 19.
  1. Other ideas or topics for National Nutrition Month – Discussion
  1. Discussion began on what other ideas could be included for National Nutrition Month, in light of the fact that the other half of the campaign is developing or increasing physical activity.
  2. Ideas mentioned:
  3. Set-up a tour of both physical facilities
  4. Establish a walking group
  5. Find out what are some of the increments on campus (for example: how far is it from the Co-Rec to STEW)
  6. Where can you go to walk during inclement weather?
  7. How do you figure the mileage in Mackey, STEW or Lambert?
  8. What are the segments in the tunnels?
  9. What exercises can you do at home: Pilates, Yoga, stretches with tubes
  10. Are there any walking maps of campus? If so, what are the segments?

  2. The Importance of Breakfast
  3. What are packable healthy lunches?
  4. The importance of hydration. How much water a day is healthy?
  5. Water vs Soda: the controversy and facts
  1. Meeting was adjourned with the idea that:
  2. We would meet again in approximately two weeks
  3. Everyone would search their files for healthy recipes revolving around the Ten Best Foods
  4. Recipes would be discussed at the next meeting
  5. Volunteers will be needed to help make whatever we decide would be good for sampling on March 8th.
