Concession Agreement

By signing this agreement, I acknowledge that I have received a copy of the Concession Rules and Procedures.

I understand that the following conditions apply:

  1. The gross revenue from each concession will be divided as follows:

Booster Club -- 60%

50%--purchase/cost of concession items

10%--Booster Club

Student group/organization -- 40%

30%--Student organization

10%--management fee (see rule 7)

  1. Improper staffing by student organization will result in a 10% loss (see rule 7)
  2. Improper cleaning will result in a $75.00 fee and possible loss of other concessions.
  3. The group operating the concessions can decide to sell additional food items not offered by the Boosters or allow another group to do so. Items offered by the Boosters cannot be supplied by the operating group.
  4. All rules and procedures will be followed.

Concession Rules

  1. Staffing - The Booster Club will designate one member to be on-site at every game in the event there are any questions or problems. The student group/organization will provide two adults (one must work the cash box) and a minimum of two students or one extra adult. (Parents can work in place of students). If doing both the field concession and PC concession, you must have full staffing at each location. As many people as possible can be used for clean-up. If a group has scheduled to work a concession but is unable to provide staffing, 3 days notice will be given to Booster Club to avoid penalty.
  2. The concession stand will remain open, at a minimum, thru the 3rd quarter of football and basketball and thru the completion of the third game of the final set for volleyball.
  3. Clean-up includes concession stand, floors, bleachers and trash. If not done correctly, a fee of $75 will be assessed to the student group/organization.
  4. All Concession Procedures will be followed.
  5. No eating allowed in concession stand.
  6. Gloves need to be removed when exiting and then replaced when re-entering the concession stand.
  7. Groups will be given the 10% management fee if they meet all the following conditions:
  8. Adequate staffing is provided by student group.
  9. All Concession Rules and Procedures are followed.
  10. No clean-up fees are incurred.
  11. Items sold in concessions will be provided by the Booster Club. If additional items are supplied by the student group (i.e. cotton candy, hamburgers), a tally must be kept for accounting purposes and all unsold additional items need to be removed at the end of the night. Carry over of outside items is not allowed without prior arrangements.

Concession Checklist

3 People Working – 1st Person takes cash (must be an adult), 2nd Person gets drinks & candy. 3rd Person prepares food with gloves.

4th person can help with food orders, make popcorn or check supplies. Feel free to rotate positions with others working.

* Please be sure to use gloves at all times when you are handling food! Person taking cash should not be handling food.

* Please keep cash box inside concessions (in PC-next to Hot Chocolate, in Football Field-next to Breaker Box)

Prep List

  1. Complete Concession Opening/Closing Form w/ Booster Rep.
  2. Put ice drinks in cooler, or serve cold drinks directly from fridge (depending on how busy it will be). Booster rep can help decide.
  3. Make sure Nacho Cheese is on and hot, and that there is an extra bag in the machine.
  4. Put Chili in crock pot, please use crock pot liner. Check fridge or freezer for leftovers first.
  5. 1½ gallons water in hot dog warmer and turn to 5, or use a Crock Pot with water. Start with 8-10 hot dogs.
  6. Make popcorn. Start with 2 batches. Be sure to turn off kettle when popping is done.
  7. Make coffee. Be sure that hot chocolate machine has powder.
  8. Set out napkins, sporks, condiments, creamer & sugar on table.
  9. Pre-fill boats with tortilla chips & corn chips for nachos/frito pies
  10. Pre-fill a few portion cups with salsa & jalapenos.
  11. 30 minutes prior to game time, call Mancos Pizza and order 2 large pizzas (1 pepperoni, 1 cheese) 533-1390. Your Booster Rep will pick this up for you.
  12. Make 2 batches of Taquitos and keep on warmer, always keep 1-2 servings ready. To cook: place 8 taquitos on preheated grill and cook for 5-6 mintues then place them on top in warmer. Be careful! Grill is HOT.

Clean-up List

  1. Begin closing down during the last quarter of the game or final volleyball game.
  2. Close the serving windows.
  3. Put leftover chili in a zip-lock bag and put in freezer.
  4. Put away extra chips and seal bag, put hot dogs buns in sealed bag and refrigerate.
  5. Empty coolers-drinks go in fridge, dump ice/water outside
  6. Restock fridge with drinks so that is full. Save room for pickles, salsa, etc. Check with Booster Rep to replenish ice in freezer.
  7. Restock shelves (if necessary) with boats, cups, napkins, snacks.
  8. Clean Hot Dog warmer – place front over sink and remove plug. Take everything out and wash, including inside of warmer.
  9. Clean crock pots, coffee pot and utensils
  10. Clean popcorn maker – wipe inside and out, clean kettle
  11. Clean Microwave – top & bottom, inside & out. 
  12. Wipe counters, nacho machine, hot chocolate machine.
  13. Sweep and mop floor.
  14. Pick up trash in gym/football field.
  15. Give used towels and washcloths to Booster Rep in a bag.
  16. Take trash out to dumpster.
  17. Complete Concession Opening/Closing Form w/ Booster Rep.
