Making Fajitas and Using an Index
CLB Level: Ph1Essential Skills Focus:
Document Use: Looking for information in an index.
Task: Copy relevant information from an index.
Purpose: Students will
- Find names of ingredients and cooking directions in an index.
- Copy numbers onto an appropriate list.
Fajita kit, realia or pictures of items features in the list.
Learning Style:
Visual, kinesthetic, auditory
Time: 40 minutes / Method:
- Solicit input from the students by displaying some of the realia. (e.g. Fajita kit) Ask the students what they see and ask them to predict what we’ll be doing? Guide them in their predictions. If the class is small enough, hand out several kits and give the students a chance to glance over the pictures and instructions. In this way, elicit the target vocabulary.
- Hand out the picture dictionaries and ask the students to look for (e.g.) a pepper. Watch for the manner in which the students find this information. Once the page and picture number have been located, introduce the students to the index at the back of the book. Solicit input as to how this is organized. (ie alphabetically) Do several examples together.
- Hand out the worksheet and encourage students to work in pairs. The task is to locate the word, write down the page/picture number and put a post-it note on the appropriate page.
- When the task is completed students can use the post-its as a guide for review.
On subsequent days, students will receive the complete list of ingredients for the Fajitas, will go on a field trip to a local grocery store and will make fajitas in class. Other activities will involve calculating the totals, finding information on the receipt, writing cheques.
Debrief/Transfer:
Ask students where else they might come across
information that is arranged alphabetically. Show examples
of the phone book, street guide to the city map and an
index at the back of other books and manuals.

Fajitas
Ingredients:
1Fajita kit
1lb boneless chicken
1 green or red pepper
1 onion
4tomatoes
1 head of lettuce
1lbcheese
250 gsour cream
1tbsp oil
Directions:
Slice pepper, onion and chicken into thin strips.
Heat 1 Tbsp oil in large skillet over medium-high heat.
Cook and stir chicken 3 to 5 minutes or until no longer pink.
Stir in onion, pepper, seasoning mix and ¼ cup of water.
Simmer uncovered 3 to 5 minutes stirring frequently.
Warm tortillas in microwave for 1 minute.
Spoon some fajita fill onto each tortilla. Add sauce + toppings. Roll up to serve.
