Greek Salad
Volunteer notes:
Make sure they take their time to cut everything evenly.
From the garden:
Red onion, tomatoes, capsicum, cucumber, mint
What to collect:
Equipment
1 medium sized mixing bowl 1 large mixing bowl

Measuring spoons Measuring cups

Ingredients
2 large tomatoes ½ red onion
1 cucumber 1 red capsicum
1 bunch of mint
120g feta cheese
10 kalamata olives
2 heads of cos lettuce
3 teaspoons of white balsamic vinegar
5 tablespoons of olive oil
½ teaspoon of salt
½ teaspoon of mustard
What to do:
- Cut the cucumber in half lengthways.
Cut each half into three.
Cut into an even 2cm dice.
Put the cut cucumber into the large mixing bowl.
- Cut thetomatoes into thick slices.
Cut each slice into an even dice, about the same size as the cucumber.
Put into the large mixing bowl.
- Peel the red onion.
Finely chop the red onion – as small as you can.
- Cut the red capsicum in half and pull out the seeds.
Cut the capsicum into long strips and then into a small even dice.
- Pick the mint leaves off the stalks.
Wash in cold water.
Dry the mint using the salad spinner.
Roughly chop.
Put into a small bowl.
- Half fill the sink with cold water.
Gently pull the leaves off the lettuce.
Wash the lettuce.
Dry the lettuce using the salad spinner.
Roll up the leaves and cut the lettuce about 1cm thick.
Add the lettuce to the large mixing bowl.
- Put the olives into the sieve.
Wash well with cold water.
Put an olive onto your board and press down onto it with the large knife.
You should be able to pull out the stone.
Remove the stones from all the olives.
Cut the olives into quarters.
Add the olives to the large mixing bowl.
- Weigh out the feta cheese.
Carefully cut the feta cheese into small, even squares.
Put the feta into a separate small bowl.
- Measure out the vinegar into a small bowl.
Add the mustard, mix with a fork.
Pour in the olive oil, whisking with a fork.
Add the salt.
This is your dressing.
- Add the chopped mint and dressing to the large mixing bowl. Mix gently with your hands.
Add the feta cheese.
Gently mix again.
Put into the white bowls for serving.
