Duties / General Expectations and Requirements.
• All staff must adhere to the strict uniform standards.
• All staff must be in store at least 15 minutes before shift starts and sign in and out correctly.
• Ensures that you follows all policies and procedures and familiarise yourself with any changes on the staff notice board.
• All expectations of the role must be completed before leaving shift within the set timeframes.
Food production.
• Make all fresh production and catering to company standards by learning the product amounts using the correct portions each time.
• Can recognise every ingredient in store and can use knowledge of what products to make when to avoid wastage.
• Finishes and dresses food to correct standard and uses the correct wrapping techniques.
Food Storage, Stock Rotation and Deliveries
• Ensure that food items are stored correctly in seal containers using the day dotting system.
• Uses stock in the correct order to minimise wastage. Use the FIFO rule (First In First Out)
• Removes / wastes and informs the Catering Manager of any out of date food or drink items.
• Maintains high standards of cleanliness in fridges, freezers and storage areas.
• Checks off all deliveries before the driver leaves store to ensure it has a sufficient shelf life. (minimum of 7 days)
• Check all items have been received by ticking off the item on the invoice and to report any missing items to the Catering Manager immediately.
• Ensure that all deliveries are stored correctly and are to be used in date order using FIFO (First In First Out)
• Communicates poor quality, missing stock and late arrivals to the Catering Manager immediately.
Cleanliness of Store
• Works hygienically and to food hygiene standards – clean as you go.
• Ensures all workstations are sanitised and maintained throughout the day.
• Utensil pots are changed with fresh sanitised hot water every 30 minutes and chopping boards are clean and sanitised regularly ensuring clean and tidy working practices at all times.
• Temperature checks are completed twice a day and recorded correctly.
• Cleaning checklist is completed throughout the day and is only initialled when task is completed.
• Closes workstation correctly and leaves it spotless.
• Uses the right cleaning product for the right job.
• The store must be fully cleaned down and all daily cleaning checks must be completed to standard before closing and leaving shift. This includes preparing the store for basic set up for the next day.
General duties throughout the day whilst in store.
At peak times and in accordance with the business needs, you will be expected to help the barista team in the general operation of the store. To be able to do this, you will therefore be trained in those roles too and you must always be vigilant whilst on shift and must offer your support to the team when busy.
You also have a degree of responsibility amongst the rest of the team to ensure that the store is always kept clean.
