Lesson title: Ready and waiting

(Context: industrial – manufacturing)

In this lesson the pupils investigate chilled ready meals, including their manufacture. They will write a specification for the development of a chilled ready meal to meet specific criteria. In addition they will create a plan in preparation for a practical session.

Registration. Go through the objectives for the lesson.
Starter
Give the pupils 5 minutes to come up with a list of as many different typesof chilled food products. These could include:
Fresh Pasta Sushi Chilled Soups
Chilled Sauces Pies, Flans and Quiches Sandwiches
Sandwich Fillings Desserts Prepared Fruit
Chilled Pizza Delicatessen Products Prepared veg
Salad Dressed Salads Dressings

Take feedback from the group and categorise the products they have come up with.
Get the pupils to come up with the features of chilled foods, for example:
  • short shelf life;
  • usually composite dishes (not always);
  • production all year.
What are the benefits? Can the pupils identify any disadvantages?
Explain that they are going to focus on writing a specification for the development of a chilled ready meal, and they will create a practical plan for the preparation and cooking of the dish.
This should be to meet specific criteria of your choice, such as a single portion meal, reduced fat version, for a family of four.
Start the pupils by taking a simple example such as a chilled sandwich. You may wish to show a short sandwich production video.
Consider:
  • the manufacturing process;
  • food safety;
  • hygiene;
  • quality assurance;
  • packaging and consumer information.

Go over the criteria for the chilled ready meal that the pupils will design and make. You may wish to review some examples of ready meals that are commercially available. Include example of ‘Cook Kits’ (all the elements of the dish are provided for the consumer to cook from scratch).
The pupils should consider existing recipes and products in order to design their chilled ready meal:
  • Can they be modified? If so, how?
  • How does the product meet the specified criteria?
Show the pupils how they can use the planning template to plan their preparation and making time when producing their dish. Give the pupils time to complete the practical planning. / Examples
