Intermediate 1 Practical Assignment 2009 – 1 ½ hours

Start time: 9.15am Finish time: 10.45am

9.15 / Crush biscuits – place in medium bowl.
Melt butter in small pan and stir into biscuit crumbs. Mix well.
Place flan ring on serving plate.
Press mixture into plan ring and chill.
9.27 / Wash and dry small pan. Place pineapple and jam in pan. Using a wooden spoon, and over a low heat, mix together. Leave to cool.
9.30 / Wash celery. Pat dry.
Wash, peel and rewash carrot. Pat dry.
Cut both into small dice to give 75g of celery + carrot. Check weights
Place on a plate.
9.38 / Peel and dice onion to give 100g. Check weight.
Crush garlic on top of onion.
9.45 / Heat stew pan. Add mince and brown.
Add onion and garlic and cook for 2-3 mins until soft.
9.50 / Add celery, carrot, mixed herbs, tomato puree, chopped tomatoes, beef stock and bring to the boil.
9.55 / Place on lid and simmer for 30 mins.
9.56 / Finely chop parsley for garnish. Place on paper towel.
CLEAR UP – Wipe down chopping board thoroughly.
10.00 / Finely chop stem ginger. Place in small bowl with 5mls ginger syrup.
Whisk the cream cheese, caster sugar and lemon juice.
Add double cream and whisk BRIEFLY until mixture forms peaks.
Wash beaters Pan of water for pasta onto boil
10.07 / Fold chopped stem ginger and syrup into cream/cheese mixture.
Place filling on top of prepared biscuit base and chill.
10.10 / CLEAR UP
10.20 / Add tagliatelle to pot of boiling water.
Bring back to boil and simmer for approx. 8 mins until “al dente” then drain well. (Warm serving dish in sink of hot water)
10.25 / Skim and taste mince. Season if required.
10.28 / Drain tagliatelle and serve on warm dish.
10.29 / Pour over Bolognese sauce. Garnish with chopped parsley
10.30 / Serve Tagliatelle Bolognese
10.31 / Whisk whipping cream to a stiff peak. Fold in sieved icing sugar.
Fill piping bag with cream.
Remove flan ring from cheesecake.
Pipe cream around top edge of cheesecake.
Spoon the pineapple and jam mixture into the centre of cheesecake and spread evenly. Wipe round edge of plate.
10.40 / Serve Pineapple and Ginger Cheesecake. CLEAR UP
10.45 / Finish
