HALL Supervisor: Job Description

Job Title: / Hall Supervisor
Reports to: / College Butler
Responsible to: / Conference & Catering Manager
Role: / To support the Butler in the supervision of day-to-day operational activities of the Dining Hall and the Fellows’ High Table, to ensure that the Department provides the highest possible standard of food service, efficiency and cost effectiveness.

Main Duties/Responsibilities:

  • Execute a courteous, professional and discreet service at all times to contribute to an effective and efficient Front of House service.
  • Direct and supervise staff and casual workers during shifts so that they meet appropriate and agreed standards.
  • Deploy staff to achieve maximum efficiency, and ensure the highest possible standards are consistently achieved.
  • Ensure that all staff and casual workers maintain a high standard of personal hygiene and appearance, that the correct uniform is worn and department hygiene standards are maintained.
  • Direct and supervise the preparation of the Fellows’ High Table for lunch.
  • Supervise the plate service of Formal meals, Events and Fellows’ High Table dinners.
  • Supervise daily housekeeping duties in all areas of service delivery, including Hall, New SCR, and Borradaille Room.
  • Assist the Butler in providing induction training for staff and casual workers.
  • Assist in organising temporary staff cover when required and induction training.
  • Keep accurate records of hours worked by staff and casual workers.
  • Assist in training staff to maintain service levels
  • Brief staff on presentation and portion control.
  • Supervise Platewash staff to ensure that all cutlery, crockery and glassware are being replenished and cleaned.
  • Participate in the appraisal of Catering Staff.
  • Assist the Butler in the care and control of College silver, ensuring that security measures applied to the control and handling of the College Plate are strictly adhered to.
  • Ensure staff comply with hygiene, food safety, manual handling and COSHH regulations and that appropriate temperature control monitoring is maintained and records are kept.
  • Ensure that a safe environment is maintained for members of College, staff and members of the public entering areas used for Front of House activities.
  • Assist in the completion and review of risk assessments.
  • Report any maintenance issues to the Butler or Maintenance Department, as appropriate.
  • Supervise the correct handling and serving of wines during meals and functions.
  • Ensure accurate daily records are maintained of wines and meals taken by Fellows in the absence of the Butler.
  • Assist with cellar management and stock control of the College and Fellows’ Wine Cellar.

The Hall Supervisors will also be required to provide cover for the Servery Supervisor during times of absence.

The above is not an exhaustive list of duties. The post-holder may be asked to undertake and assist in any other tasks as instructed by the Butler within the overall function of the role. All employees are expected to work collaboratively to support the overall function of the Catering Department.

The post-holder will be required to attend any identified training courses to enable him/her to competently perform the duties of the post, including health and safety training.
