Pearl Sugar

Ingredients:

125 ml sugar

10 ml water

Directions:

  1. Add sugar and water together in a small pot over the lowest possible heat.
  2. Using a wooden spoon, mix until small pearls begin to form and the sugar clumps together.
  3. If there is a large amount of loose sugar, add 2 ml and mix again (too much water will just leave you with soggy sugar!).
  4. Once clumps have begun to form, leave the sugar to dry out in these clumps, about 15-30 minutes. Stir occasionally.
  5. After sugar has dried out, remove from heat and let cool.
