Gaufre de Bruxelles
Yield: about 10 waffles
Ingredients
500 ml all-purpose flour
2 ml salt
4 ml instant yeast
65 ml lukewarm water
15 ml brown sugar
250 ml lukewarm water
125 ml powdered milk
1 ml vanilla extract
150 ml melted butter
2 egg whites, beaten to the stiff peak stage
Directions:
- Measure flour and salt into a large bowl and make a well in the flour.
- Into the well of the flour, add the yeast and 65 ml water.
- Add the brown sugar, powdered milk, vanilla extract, then water (in that order). Mix and beat dough well with a wooden spoon for about 5 minutes.
- Allow dough to rest 15-20 minutes.
- While dough is resting, melt butter in the microwave, then leave on counter to cool until lukewarm.
- Add melted butter to dough, and mix vigorously for about 1 minute to incorporate butter.
- In a separate bowl, use a mixer to beat egg whites to stiff-peaks.
- Carefully fold beaten egg whites into batter until evenly mixed.
- Heat a large waffle iron. (NO need to grease iron)
- Place ~25 ml of the batter per waffle, and bake until light-golden.
- Serve with icing sugar, whipped cream and fruit or Nutella/peanut butter/jam.
Gaufre de Liège
Yield: about 10 waffles
Ingredients
420 ml all-purpose flour
15 ml sugar
1 ml salt
1 egg
1 ml vanilla
4 ml instant yeast
200 ml melted butter
200 ml cold water
125 ml pearl sugar
Directions:
- Measure flour, sugar and salt into a large bowl and make a well.
- Melt butter in the microwave, then leave on counter to cool until lukewarm.
- In a separate bowl, beat eggs and vanilla with a whisk. Once beaten, add butter and yeast; mix well. Add water and whisk again.
- Add egg and yeast mixture to the flour bowl.
- With a wooden spoon, mix this batter and beat for at least 10 minutes. (it will be sticky and tough!)
- Once batter has been beaten, let stand for 15-30 minutes.
- Add pearl sugar 5-10 minutes before baking the batter by folding in carefully.
- Heat a large waffle iron. (NO need to grease iron)
- Place ~25 ml of the batter per waffle, and bake until light-golden.
- Serve with icing sugar, whipped cream and fruit or Nutella/peanut butter/jam.
Pearl Sugar
Ingredients:
125 ml sugar
10 ml water
Directions:
- Add sugar and water together in a small pot over the lowest possible heat.
- Using a wooden spoon, mix until small pearls begin to form and the sugar clumps together.
- If there is a large amount of loose sugar, add 2 ml and mix again (too much water will just leave you with soggy sugar!).
- Once clumps have begun to form, leave the sugar to dry out in these clumps, about 15-30 minutes. Stir occasionally.
- After sugar has dried out, remove from heat and let cool.
