Fruit lavash is a dried sheet of fruit-berry puree (in Armenian - ttu lavash, in Georgian-tklapi, in Russian–levishnik, orlavashnik, sour pastille). Depending on the raw material/fruit used and their ratio fruit lavash has a sour or sour-sweet taste.

Fruit lavash is a completely natural product admired by all ages. An excellent source of vitamins and amino acids. It is consumed as a dessert, the one made of plums is applied as additive to various sauces and gravies. This product is ready for consumption both in pure form and in the form of rolls with addition of various additives (walnuts, peanuts, hazelnuts, etc.).

Preparation. Fruit lavash is cooked fruits and berries such as plums, cherries, apricots, strawberries, blackberries, and similar fruits. You can experiment with other local fruits to your local tastes. Raw fruit is pre-washed, cleaned, the seeds and stem are removed. Then it is boiled at the same time mixing, and the resulting mass is mixed until it becomes smooth. After mixing a thin layer of still warm mass without peel is poured on tray and dried for several days.

Dried up, but still elastic mass is removed from tray with a palette-knife and dried a little on the back side. Then it is rolled into tubes and stored in a cool dry place. The thickness of ready lavash should not exceed 3 mm. To make strips of fruit lavash you can use pizza wheel knife.

Correctlystored fruit lavash doesn’t lose its taste, aroma and edible characteristics up to 3 years.

Operation principle:

Weldedfruit mass is fed to the bunkerthrough the mesh filter by the fruit mass feeding pump 3.On the mesh of filtersome pieces of fruits remain, liquid mass passes through the cells of the mesh. Further fruit mass feeding pump 3feeds mass to the bunker of pouring device2 through the flexible pipe. Bunker is equipped with level sensors for mass level control, screw pump keeps the constant level by sensors signal.

After that pouring device feeds fruit mass in the shape of stripes to a tray through sprayers. Pouring device has a batched mass volume control, and each sprayer has feed control. During the pouring tray timely moves by chain conveyor 1for distributing fruit mass along the tray. After the pouring of fruit mass tray is fed to the vibrating table 4 for the uniform distributing of the mass along the surface of the tray. Feed and removing a tray from the conveyor is made manually. Trays are put on trolley 5 for further transfer to the drying chamber 6.
