Veg Kid Maze
Vegan English Muffin Pizza Recipe
- Take one vegan English muffin per person (whole wheat preferably).
- Set out a small dish of all topping choices, such as onion, green pepper, grated vegan mozzarella cheese, organic tomato sauce, diced tomatoes, and vegan frozen burger crumbles.
- Toast the English muffins as desired (some like them crunchy, others like them soft).
- Lay the English muffins on a cookie sheet. Allow the kids to create their own pizzas, starting with the sauce, then adding all the toppings they prefer. Then, add a dash of oregano and put the pan in the oven. Cook it for 8-10 minutes in a 425 degree preheated oven.
- Eat them whole or use a pizza cutter and cut them in half or fourths. Enjoy!
Veg Kid Vegan “Quesadilla” Recipes
- Peanut butter and banana. Take a whole wheat tortilla and spread natural peanut butter on it. Slice a banana thinly, laying the pieces flat so it covers and is spread out on the tortilla and on top of the peanut butter, sprinkle with cinnamon, and then put in the maker. Let it cook for about 1.5-2 minutes in a quesadilla maker, or one to two minutes per side in a heated pan. Remove and use a pizza cutter to cut in triangle slices. Let it cool, because it will be very hot.
- Take a can of vegetarian refried beans and a slice of vegan cheese. Spread your whole wheat tortilla with the beans, tear the cheese into strips and spread it around on the top of the beans (or use shredded vegan cheese and do the same), top with another tortilla. Let it cook for about 1.5-2 minutes. Remove and use a pizza cutter to cut in triangle slices. Let it cool, because it will be very hot.
- Pizza style - start with a whole wheat tortilla, top with organic sauce, vegan cheese, pizza toppings, another tortilla, and then follow the cooking and cooling steps above.
- Use your imagination! You can use this idea to make so many varieties, including vegan deli slices and cheese, grilled peanut butter and jelly (using all natural peanut butter and pure fruit jelly), hummus and then topped with salsa, grilled vegetables and organic tomato sauce, etc.
