Oats
INSTANT OATMEAL PACKETS - Makes 10 packet of instant oatmeal
To make individual instant packets: Blend 1/2 cup of oats until powdery.
Into each of the 10 packets (perhaps individual zip lock sandwich bags), combine the following ingredients:
1/4 cup oats
2 Tbs. powdered oats
1/8 tsp salt
1 tsp sugar (optional)
(I added my dried fruit to each packet about 1 T. per packet.)
Close the top and store in a dry place.
MICROWAVE DIRECTIONS FOR COOKING:
Empty packet into microwave bowl. Add 2/3 cup water or milk. Microwave at high about 1 1/2 minutes: stir.
CONVENTIONAL DIRECTIONS FOR COOKING:
Empty packet into bowl. Add 1/2 cup boiling water: stir and let stand to thicken.
OATMEAL PANCAKES
2 cups oatmeal 2 cups buttermilk
½ cup flour 2 T sugar
1 tsp baking powder 1 tsp baking soda
2 eggs, beaten ½ cup milk
½ cup melted margarine or oil
Stir everything together and refrigerated overnight. Cook on a hot skillet.
Cider Syrup:
½ cup sugar 1 T cornstarch
1/8 tsp cinnamon 1/8 tsp nutmeg
2 cups apple cider or apple juice
1 t bottled lemon juice
Whisk together dry ingredients. Add apple cider and bring to a boil. Remove from heat and stir in lemon juice. Serve over pancakes.
HEART SMART BAKED CHICKEN
chicken breast 6 or more
1 cup oatmeal (not instant)
1/3 cup parmesan cheese
1/2 tsp salt
1/2 tsp paprika
1/8 tsp pepper
2 cloves minced garlic
1/2 cup milk
1/2 cup margarine melted
In blender, place oatmeal, parmesan cheese, salt, pepper, and paprika, blend for 1 minute. Mix milk and garlic together. Roll chicken in oatmeal mixture, then milk mixture, then oatmeal mixture. Put in baking pan, drizzle with margarine and bake at 375 degrees for 1 hour.
GRANOLA BARS
Melt: 1/4 cup butter
1 cup peanut butter (crunchy)
1 cup white karo syrup
4 cups min. marshmallows
Stir till melted
In a Large bowl mix: 6 cups oats
1 cup chocolate chips
1 cup coconut (opt.)
1 cup nuts
2 cups raisins
Pour hot mixture over and form into bars by hand. These freeze really well.
GRANLOLA BARS
8 cup oatmeal 1 cup wheat germ
1 cup oil 2/3 cup honey
2 tsp Vanilla
Mix together and bake at 350 for 30 minutes stirring every 10 minutes.
In a large bowl mix: 3-4 cups granola
1 cup coconut
1 cup peanuts unsalted
1 cup raisins
Melt: ¼ cup margarine and 8 oz. large marshmallows
Mix all together after cooled a little add chocolate chips, put in a 9x13 inch greased pan.
OATMEAL BREAD - makes 2 loaves
1/2 cup warm water
2 Tbs. active dry yeast
3/4 cup water, boiling
3/4 cup rolled oats
1 cup buttermilk (or 1/3 cup powered milk, 1 cup water, 1 T. vinegar or lemon juice)
1/3 cup oil
1/2 cup honey or molasses
2 cups all purpose flour
1 T. salt
1/2 tsp soda
3 to 3 1/2 cups all purpose flour
In small bowl, stir yeast into 1/2 cup warm water: allow to stand until yeast dissolves and bubbles up. In medium sauce pan, bring 3/4 cup water to boiling: stir in oatmeal and cook several minutes. Remove from heat: add buttermilk, oil, and honey or molasses. Sift flour, salt, and soda into a large mixing bowl. Add yeast mixture and oats mixture and beat with wire whip or slotted spoon; let stand 5 mins. Gradually add enough of remaining flour until dough is stiff enough for kneading. Turn out onto floured surface and knead 8 to 10 mins. or until a soft, elastic ball forms. Place dough in clean greased bowl, cover with plastic wrap and allow to rise until double in bulk, about 1 1/2 hours. Punch down dough and divide into two portions: cover with bowl or towel and allow to rest 10 minutes. Form into loaves and place in greased 8x4 inch pans. Cover and let rise until double in bulk. Bake at 350 degrees for 45 to 50 mins. or until done. Remove from oven and turn out to cool on wire rack.
OATMEAL WHEAT BREAD
2 cups boiling water
1 cup dry rolled oats
1 pkg yeast
1/3 cup warm water
1 T salt
1/2 cup honey
1 egg
2 T molasses
1 tsp vinegar
2 cups whole wheat flour
4 to 5 cups white flour
In a large bowl pour the boiling water over top of the oats and let sit for 30 minutes. While this sets, dissolve the yeast in the warm water. To the oat mixture add the salt, honey, egg, molasses, vinegar and the yeast mixture. Stir in the whole wheat flour, then gradually add enough of the white flour so the dough can be kneaded, (it will be slightly sticky). Turn out on to a floured board and knead 5 to 10 minutes. Place dough in a greased bowl and turn to grease other side, cover and let rise until double, about 1 hour. Punch down, divide into 2 loaves and place in greased loaf pans, cover and let rise again for about 45 minutes. Bake at 350 degrees F for 25 to 30 minutes. Makes 2 loaves.
SPANISH PEANUT COOKIES
1 cup brown sugar 1 ½ cup flour
1 cup white sugar 1 tsp Soda
1 cup shortening 3 cups Quaker oats (not the quick kind)
2 eggs 6 ½ to 8 oz. salted Spanish peanuts
1 lb. vanilla
Mix as any other cookie, bake at 350 – about 10 minutes.
CHOOSE-A-CHIP OATMEAL COOKIES
3 cup flour
1 1/2 cup sugar
1 1/2 cup brown sugar, packed
1 1/2 tsp soda
1 1/2 tsp salt
1 1/2 cup shortening
3 eggs
6 T. milk
1 1/2 tsp vanilla
4 1/2 cups rolled oats
3 cups of chips of your choice (butterscotch, chocolate, peanut butter,)
Mix like a regular cookie. Bake 350 degree for 8 mins.
BOILED COOKIES
2 cups sugar ½ cup milk
½ cup butter 4 T. Cocoa
Bring to full boil, boil one minute. Remove from heat and quickly add:
3 cups quick cooking oats
½ cup peanut butter 1 tsp Vanilla
Drop from tsp. onto wax paper let stand until cool.
BLACKBERRY TORTE
1 no. 2 can blackberries
3/4 cup sugar
1 T. butter
1 cup water
3 T. cornstarch
Pour berries into a sauce pan along with sugar and butter. Heat. Combine cornstarch and water and add to the berry mixture, stirring only until it thickens.
CRUST:
1 3/4 cup oatmeal
3/4 cup butter
1 1/2 cup whole wheat flour
1 cup sugar
1 tsp soda
Combine all ingredients in a bowl, blend thoroughly. Press 1/2 of it into a 9x13 inch baking dish. Pour berry mixture over the top, distributing evenly. Place remaining mixture over the filling. Press gently. Bake at 350 degrees for 35 mins. Hint: To make this faster just use canned pie fillings.
MOLASSES CHOCOLATE CHIP COOKIES
2 ¼ cups brown sugar (or ¼ cup molasses)
2/3 shortening melted
3 eggs
2 ¾ flour
2 ½ tsp Baking powder
1 tsp Soda
½ tsp Salt
½ cup oatmeal
1 tsp Vanilla
1-6 oz. semi-chocolate
1 cup nuts
Bake at 350 12-14 minutes.
OATMEAL SCONES
1 ½ cup flour
¼ cup sugar
¼ tsp salt
½ cup milk
1/8 tsp cinnamon
1 ¼ cup oats
1 T. Baking powder
1/3 cup margarine
1 egg
1 tsp sugar
Heat oven to 375, combine flour, oats, sugar, baking powder and salt. Cut in margarine until course. Combine milk and egg, mix until moist. Form a ball, turn out on floured board. Knead 6 times. Lightly grease a cookie sheet. Pat out an 8” circle and score in 12 wedges. Sprinkle with sugar and cinnamon. Bake 20 to 25 mins. Serve warm with butter and jam.
COWBOY COOKIES
2 ¾ cup packed brown sugar
1 ¾ cup sugar
1 ¼ cup margarine softened
1 ¾ cup shortening
5 ½ tsp Vanilla
5 eggs
Cream together
Then Add: 4 ¼ cup flour
4 ½ cups rolled oats
3 ½ tsp Soda
1 ½ T. cinnamon
1 ¾ Tsp Salt
2 cups chocolate chips
1 cup peanut butter or butterscotch chips
1 cup nuts (opt.)
Bake at 375* 8 to 10 minutes
DAVY COCKET COOKIES
1 cup white sugar
1 cup brown sugar
1 cup shortening
3 eggs
2 cup flour
1 tsp salt
1 tsp soda
1 tsp baking powder
2 cups quick oats
1 tsp vanilla
1 cup chocolate chips
1/3 cup nuts
Cream sugar, shortening and eggs. Add dry ingredients. Add rest. Bake in large pan at 350 for 20 to 25 mins. Cut into square when cool.
PEANUT BUTTER APPLE COOKIES
2 cups packed brown sugar
¾ cup peanut butter
1/3 cup margarine
2 eggs
1 tsp vanilla
1 cup flour
1 cup whole wheat flour
2 tsp baking soda
¾ tsp salt
1 cup quick-cook rolled oats
1 cup diced peeled apples
Mix brown sugar, peanut butter and margarine. Add eggs and vanilla. Add dry ingredients. Then apples. Bake at 350 for 12 mins.
PEANUT BUTTER CRIPS
1 cup margarine
1 cup peanut butter
1 cup brown sugar
½ cup sugar
2 eggs
1 tsp Vanilla
2 ½ cup oats
1 cup flour
2 tsp Salt
You can add chocolate chips ½ package.
Mix like regular cookies. Bake at 350* for 10 minutes.
TRAIL MIX
3 cup oatmeal
1 cup sunflower seeds combine all 3
1 cup chopped nuts
½ cup corn oil
½ cup dark Karo syrup
1 T. Cinnamon
1 T. Vanilla
Combine and mix well with top mixture spread on pan and bake at 350 for 20 to 30 mins, stirring a few times.
Add 1 1/3 cup rice krispy’s after baked.
PEANUT BUTTER:
1 cup sugar Melt sugar with Karo syrup
1 cup light Karo syrup
Add 2 cups Peanut Butter. Pour over Trail mix press into pans. Top with chocolate.
CHOCOLATE:
½ cup chocolate chips in with the trail mix
1 cup chocolate chips Melt and put on bottom of pan,
1 T. Water then trail mix, then another batch
