Description of Student Roles and Problem Situation:

How can we, as the interdisciplinary team, which includes two dietitians, one nurse and one physical fitness specialist with the Bay County Chapter of the American Red Cross, educate the 3rd, 4th, and 5th grades of Bay County on the how to live longer with proper nutrition and exercise in such a way that

  • We meet the deadline for the educational forum
  • We construct a educational forum covering all the objects asked by the superintendent of the Bay County Schools
  • We choose age appropriate educational information for the educational forum
  • We present the educational forum in a way that is easy for that age group to understand

Adaptations for a student from a non-Western culture:

1. Teacher will talk with student on a one-to-one basis and determine the student’s prior knowledge of the subject area through direct questioning.

2. Teacher will research that student’s culture to see if there is any cultural values that may be an issue in dealing with diet, exercise, and chronic illness and address those issues with the student one-on-one and align instructional techniques and classroom activities with those cultural values.

Adaptations for ESOL student:

1. Teacher will either include resources or assist student in locating resources in the student’s first language.

2. Teacher will provide student with description of student roles and problem situation in student’s first language.

3. Teacher will allow student to use native language dictionary to help with assignment.

Learner Characteristics of Elementary School Students

Physical: Obesity can become a problem for some children of this age group (p. 78).

Justification: Children at this age now have more control over their eating and physical activity habits. Nutrition value of foods they are eating needs to be address by comparing healthy food choices with junk food. Also, due to televisions and video games physical activity is reduced. Students will address ways to incorporate physical activity back into their daily routine.

Social: The peer group becomes powerful and begins to replace adults as the major source of behavior standards and recognition of achievement (p. 79).

Justification: Children at this age want to be accepted by their peers. Peer pressure starts at this age. Appearance becomes important and prejudices against those that are different begin.

Emotional: During this period, children develop a more global, integrated, and complex self-image (p. 80).

Justification: Children at this age begin to compare themselves to one another (“I’m taller than my friend”) as well as to broad-based norms (“I am tall for my age”) in effort to determine who they are (p. 81). It is important that children have a positive self-image of ones self.

Cognitive: The elementary grade child can think logically, although such thinking is constrained and inconsistent (p. 81).

Justification: Knowledge base of children this age contains many misconceptions. This is important to remember when teaching the importance of nutrition and exercise and address any misconceptions voiced.

Physical: Although small in magnitude, gender differences in motor skill performance are apparent (p. 79).

Justification: Knowing the gender difference in motor skills of children this age is important when coming up with a physical education plan.

Each student in the group will take on the role of a (2)dietitians, nurse, and physical fitness specialist making sure each role in the group is represented. Each group will hold an educational forum and take time at the end of each forum for a brief question/answer session. The class will play to role of the elementary school students for each group.

Meet the Problem Document:

The chairperson for the local American Heart Association has been asked by the Bay County School Superintendent to provide an educational forum to each of the elementary school in BayCounty to deal with the issues of proper nutrition, individual well-being, and physical fitness.

January 20, 2008

Dear Interdisciplinary Team,

The American Heart Association as been asked by the Superintendent of Bay County schools to organize an education forum to be presented to the elementary schools in BayCounty. The purpose of the education forum is to provide information on proper nutrition, physical fitness, and individual health and well being to the students in the third, fourth and fifth grades. I am asking the team to select among yourselves two dietitians, a nurse, and a physical fitness professional to organize and facilitate these forums. I will need to have a team organized by Wednesday, January 22, 2008. The team members will need to meet with me that day at noon for a brief meeting. The team will need to prepare all educational material for the forum. Please use the United States Department of Agriculture’s website for guidance in your educational material planning. At this website you will find the MyPyramid for kids classroom material. This information covers proper nutrition, chronic illness affecting children today due to improper nutrition and exercise, and recommended amount a daily physical activity for children. Please make sure information given is age appropriate. The first forum will be February 4th. A schedule of the forums will be given at the meeting. If you have any questions please feel free to contact me. Thank you.

Capstone Performance Description

The PBL Problem:

Problem Statement

How can we, as the interdisciplinary team, which includes two dietitians, one nurse and one physical fitness specialist with the Bay County Chapter of the American Red Cross, educate the 3rd, 4th, and 5th grades of Bay County on the how to live longer with proper nutrition and exercise in such a way that

  • We meet the deadline for the educational forum
  • We construct a educational forum covering all the objects asked by the superintendent of the Bay County Schools
  • We choose age appropriate educational information for the educational forum
  • We present the educational forum in a way that is easy for that age group to understand

How Students Will Share the Solution to the Problem:

The capstone performance for the problem contains 2 parts: an individual report and a group presentation. Individual students will be assessed on both of these parts via 2 different rubrics- a report rubric and a presentation rubric. Each student will be given rubrics to follow for both the individual report and group presentation. The teacher will go over the rubric and answer any questions prior to beginning the assignment.
The students will be divided up into five groups heterogeneous of four. The teacher will go around to each group having students draw from a hat what their individual role (2) dietitians, nurse, and physical fitness professional) in the group will be at the educational forum. The teacher will then provide to each group a list of resources to be used in the education form. The student will have two weeks during health class to compile, review, and discuss the information used to make their group presentation. During the last session each group will present a 10-15 minute education form to the class. Each role in the group will presentation a 2 minute (approximately) presentation in their role addressing the learning objectives for the role. The role of the nurse must address in the presentation at least one chronic condition in children due to improper nutrient and lack of physical that were previously only found in adults. The role(s) of the dietitian must address in the presentation at least list two healthy choices the students can choose from for snacks from each of the five food group. The role of the physical fitness profession must accurately identify in the presentation how much physical activity is recommended daily for good health, to prevent weight gain, and to lose weight based on the MyPyramid teaching for children.

One visual aid must be used by each student (example: MyPyramid chart). At the end of each session the audience (the other students) will participate in a question and answer session. Each student is required to ask one question in one of the sessions. Parents will be invited to participate as the audience along with the class. This will be under the presentation rubrics as class participation. The presentation hour will be preplanned by the teacher in order to utilize the school cafeteria when not in use. The students will make their presentation on stage with whatever educational information visual aids they plan to use. The audience will be out in front of the stage sitting in rows of chairs. The students in the audience will be expected to write down one question they would like to ask at the end of each session and the teacher will randomly pick four to five students to ask their question at the question and answer session. Each student will have to ask one question. Upon returning to class the teacher will lead the class in a group discussion regarding the presentation. The teacher will then have each group come up with four justifications for choosing one of the groups presentations of the others. Student autonomy is incorporated as each student will develop their own part of the educational forum. Metacognition is encouraged as each student develops a question for the question and answer session of the forum. The written report part of the assignment will be incorporated into a homework assignment. The student will be given a rubrics and the teacher will go over the rubrics with the students prior to the assignment. The students will submit a draft and then the final assignment over the course of one week. The written assignment must address at least one chronic condition in children due to improper nutrient and lack of physical activity that were previously only found in adults. The written assignment must also list two healthy choices from each of the five food group. The written assignment must also accurately identify how much physical activity is recommended daily for good health, to prevent weight gain, and to lose weight based on the MyPyramid teaching for children. An individual solution must align with problem statement.
