Each team will be allotted a 10’x20’ space. Please keep all cooking equipment inside that area.
Contestants agree to indemnify and hold High Steaks Rollin and or Sallisaw Chamber of Commerce, it employees and volunteers harmless from any and all claims made against the above named entities, without limitations, all costs, liabilities, judgments, expenses, damages and attorney’s fees, arising out of or in connection with (1) any structure erected by Contestants (2) any apparatus, equipment, or personal property used by the Contestant (3) any act or omission to act of Contestant, its agents, invitees, participants, representatives, employees, servants, and agents (4) any claims made on account or resulting from Contestant’s participation in the contest.

HIGH STEAKS ROLLIN
STEAK COOKING RULES
1. Cooking teams may use any type of fuel desired. Cooking teams will provide their own fuel and lighter.
2. SCA will provide 16 oz. rib eye steaks. Each team will choose their two competition steaks at the cooks meeting, 10:00 am Saturday June 3rd .
3. Teams are to provide ice chests and ice for steak storage prior to cooking. For your convenience, ice will be available on festival grounds.
4. No other steaks are to be present other than the rib eyes that are given to you. If any other steaks are found, your team will be disqualified from the steak judging and the team will forfeit its entry fee.
5. All steaks are to be handled in a sanitary manner. Cooks are expected to wear plastic gloves at all times while handling the steaks.
6. Grills will be inspected for cleanliness. Unclean grills will be rejected.
7. The cooking teams will provide all seasonings and or secret ingredients.
8. Cooking teams are responsible for providing their own tables, chairs, sun shades and etc.
9. Each team should have a fire extinguisher readily available.
10. Appetizers for the Appetizer Contest should be turned in at the Ag. Bldg. by 12:00 noon.
12. All steaks are to remain the property of High Steaks Rollin. Teams will be expected to turn in their one competition steak in the numbered container issued to the team. Contest steak turn in time will be 2:00 pm, at the Ag-building.
13. Steaks will be judged with regard to taste, appearance, texture, and tenderness. All steaks should be cooked medium. No garnish is allowed in the container with the steak.
14. The entire field will be blind judged by a panel that will pick the top ten steaks.
15. The chief cook must cook the competition steak that is turned in. Winners and awards will be announced at 3:30 unless judging is complete earlier in which case a festival volunteer will notify each team, individually.
16. You will receive a packet in the mail approximately one week prior to the event. This packet will contain your gate pass and other pertinent information.
Upon arrival at Sallisaw High School, stop and check in at Big Ernie’s Black Diamond BBQ, east of the stage area, by the High School Building. You will then be assigned your cooking spot. Teams will be allowed to begin arriving and setting up on Friday, June 2nd. If you are arriving on Friday please plan on being in place by 5:00 pm.
We will hold a mandatory cook’s meeting at 10:00 am on Saturday in the Ag building. You will be given your t-shirts, numbered container, and competition steaks at that time.
It is also important to remember that this event will be held on our High School campus. Please help us keep this an alcohol free event.
