“SEAGULL” WINGS COOK-OFF
Rules and Regulations-Amateurs
HealthDept. Permitting- The Port Orchard Chamber of Commerce will apply for a temporary event application from the Kitsap County Health Dept. for all entrants in the Amateur Category.
The cost of that permit is covered in the entrant fee below.
Every volunteer, helper, contestant must have a food handler’s permit. They are available online at under Information, under Food Safety, under Food Worker Cards.
Ingredients & Preparation
- Please use high quality, freshly thawed wings. We will be checking the temperature of uncooked and cooked wings throughout the day. Packaging for the uncooked wings must be unopened before arriving. No preparation or marinating can occur before arriving at the event.
- The Health Dept. will visit your booth at some point to inspect. NO EATING IN YOUR TENT AREA!
- Any seasoning or ingredient necessary to create unique taste is acceptable.
- Wings and sauces MUST BE PREPAREDONSITE on a grill or in a propane deep fryer. No preparation or marinating can occur before arriving at the event.
- Please provide a minimum of 200WINGS. We do anticipate large crowds so supplying 200 wings is appreciated. (You will receive compensation from the distribution of the wings to the public.)
- You must bring your own canopy tent, coolers, tables, chairs, cooking utensils, cooking equipment, paper towels, trash container,and all other necessary equipment. You must provide your own mandatory wash station.
- No water, electricity or refrigeration will be provided. You must remove your trash at end of the day.
- We recommend you have at least three people at your booth/station helping. Once you have begun to sell wings it will be very busy!
- Please provide your own chafing dish and tongs for the distribution of the wings to the public and your own plate or platter for presentation to the judges.
- Wings must be available for judging no later than noon,Sun. May 24th. You will begin selling your wings at approximately 12:30pm
Booth Set up and Tear Down
- We recommend you start set-up of your booth early! You may set-up starting at 7:30am. You may access your booth space byvehicle only prior to 9am. Your vehicle must be removed before that time as the Port Orchard Farmer’s market begins at 9am. After 9am you may hand-cart equipment/items in to your space. Booth space will be approximately 10 foot by 10 foot, with additional outside area for cooking, grills etc. Vehicle access is available again after the Farmer’s Market ends in the late afternoon. You cannot break down your booth until all of the wings have been sold and/or the Seagull Calling Festival is over.
- There will be a brief on-site meeting the morning of the event with all contestants to go over the day’s activities and ask any questions.
Judging
- Please provide a serving piece/platter for presentation of wings to the Judges.YOU WILL BE JUDGE ON YOUR PLATTING!
- You will be assigned a number for judging. There will be a designated place for wings to be left for judging. You will not be allowed in judging area.
- Judging Criteria. You will be judged on the following: Taste 10 pts.; Originality 5 pts.; Plating 5pts.--for a possible total of 20 pts.
- 1st, 2nd & 3rd Awards/Plaques for Best “Seagull” Wings will be given as determined by the judges.
- Judging will start at noon. 1st, 2nd & 3rd place winners will be announced at the completion of judging.
- A People’s Choice Awardwill be determinedby ballots available ONLY at the PO Chamber headquarters tent.This award will be announced at approximately 1:50 pm.

Distribution of Wings to Public
- The Port Orchard Chamber of Commerce will provide food boats, napkins and tickets to the public for a donation of $1.00each. Tickets will be presented to you at your booth for wings. Once selling of wings begins you may trade a wing for a ticket until you run out of wings. Please return your tickets to event officials at PO Chamber cook-off headquarters. The Chamber will send you a check within one week forthe wings sold. Remember to save your tickets!
- Distribution of wings will begin at approximately 12:00pm and continue until there are no wings left. “People Choice” voting will take place at 1:50pm.
Application, Fees and Registration --Space is limited, register early
- Application due by May 15th.
- Upon arrival you must check in with cook-off coordinator.
Any infraction of above rules and regulations, may disqualify you from the competition.
Areas must be cleaned up at the end of the event. All equipment must be off the premises by 5 p.m. The Port Orchard Chamber of Commerce appreciates your help in keeping the Port Orchard Marina Waterfront Park beautiful. Please clean up any trash that is within your booth space. Your trash is your responsibility.
