Even after many decades of research, it seems as if several questions remain regarding the role of dietary lipids in health. Several of the plausible reasons for this are not unique to lipids, but are shared across many nutrients and food components. Using dietary lipids as an example, this session will discuss those factors that may have led us down the path to uncertainty regarding real-world dietary guidance, and will provide the audience with food for thought, as well as tools, to move toward a more certain future.
Beginning with a discussion on some of the elements of research design, reporting and interpretation that have confused the literature, the audience will be directed in a more positive direction: the future. Non-traditional approaches for determining nutrient recommendations, such as risk assessment models, will be examined and new data on partially hydrogenated oils will be presented. This talk will allow for dialogue among a wider audience of scientists to progress as to whether certain nutrients require different methods of evaluation – and what the pros and cons of such alternative approaches are. A greater understanding of the role of lipids in foods will help researchers in choosing appropriate comparators moving forward, and shed light on why the field of lipids and health is a complicated one for which no single solution will ever exist.
The points above will be conveyed through three case studies. The first two will examine substitution scenarios for saturated fatty acids, diving into the story line of trans fatty acids followed by that of interesterified fats, likely unfamiliar to many in the audience. The third case study will cover omega-3 fatty acids, highlighting the rich history of research, debates surrounding recommended intakes, and suggestions for the future.

Funding will be sought to pay advance-purchase travel for speakers who are not members of the Society. Travel reimbursement is not provided to ASN members. A travel stipend and/or honorarium of up to $500 may be provided to ASN member speakers, based on funding. International airfares are typically limited to $2,500. Symposia may include up to 4 speakers, of which no more than one should be from outside of the US. Special requests (e.g., 5 speakers, more than one international speaker) will be considered on a case by case basis.
