Course Description:Food science integrates many branches of science and relies on the application of the rapid advances in technology to expand and improve the food supply. Students will evaluate the effects of processing, preparation, and storage on the quality, safety, wholesomeness, and nutritive value of foods. Building on information learned in Nutrition and Wellness and Chemistry, this course illustrates scientific principles in an applied context, exposing students to the wonders of the scientific world. Careers will be explored

Standards:

FCS-FS-1: Students will define food science and explore careers in food science.

FCS-FS-2: Students will discuss how and why scientific evaluation of foods is conducted.

FCS-FS-3: Students will discuss the basic chemistry concepts of food science.

FCS-FS-4: Students will discuss how energy works in food preparation and preservation.

FCS-FS-5: Students will discuss why water and pH are important factors in food preparation and preservation.

FCS-FS-6: Students will discuss why carbohydrates are important in food preparation and preservation.

FCS-FS-7: Students will discuss why lipids are an important ingredient in food preparation and preservation.

FCS-FS-8: Students will discuss why proteins are important in food preparation and preservation.

FCS-FS-9: Students will discuss why vitamins, minerals, and phytochemicals are important food components impacted by food preparation and preservation.

FCS-FS-10: Students will discuss the reasons for the use of food additives and food analogs in food preparation and in processed products.

FCS-FS-11: Students will discuss the principles of fermentation.

FCS-FS-12: Students will discuss the principles of food safety and identify intervention procedures to maintain safe food.

FCS-FS-13: Students will compare and contrast different food preservation methods and the resultant quality of preserved food.

FCS-FS-14: Students will examine emerging technology in the field of food science.

National Organization:Family, Career, and Community Leaders of America (FCCLA) membership is offered to all students who are enrolled in Consumer Sciences. This organization will be integrated into the curriculum. This club will meet in Mrs. Prothro’s room. Dues are $40.00*, this includes your t-shirt.

Student Expectations:Students are expected to meet assignment deadlines, follow class rules, participate in class, and make an effort. Students are expected to come to class prepared by bringing a writing utensil. You are required to have ONE 3-ring bindersand a pack of dividers. These will be essential in order to keep organized for this class. Students are expected to write down and keep up with all assignments.

Classroom rules and procedures:Vandalism and/or destruction of class materials will not be tolerated. This includes the textbooks and any supplemental materials that may be provided for student use. It is expected that each student return materials to the appropriate storage location at the end of class in a usable format for the next group of students. Students are expected to clean up after themselves at the end of class.

Students will have the opportunity to use computers as an integrated part of the coursework. All students are expected to follow the appropriate use guidelines (the same as in any other course) of the computers in the classroom or in the computer lab.

All computers in Pelham High School are the property of the Pelham City School System. Students shall only use computers and software for educational purposes in conjunction with assignments given byfaculty of PHS. Any student that is found using computers or software in a non-educational setting will be subject to discipline procedures.

  • Be honest!!! Don’t mistake my kindness for weakness. If you lie to me once there will be consequences as there will be in any situation in life!!
  • PLEASE DO NOT USE CELL PHONES and/or IPODS while Mrs. Prothro is lecturing.
  • Come to class prepared to learn at all times.
  • RESPECT others!!! That includes your peers and the teacher. Do not talk when the teacher is talking and when your peers are talking.
  • No sleeping
  • No profanity
  • No attitudes

Attendance:Students must be in attendance for ½ a school day in order to be counted present and to participate in extra – curricular activities.

b) Students who accumulate more than 10 unexcused absences within a semester are subject to being removed from PHS and placed in the alternative school for a minimum of one full academic semester. Additionally, students will be reported to authorities under the provisions set forth by the Compulsory Attendance Law.

You are considered tardy when you are not inside the classroom when the bell rings.

Tardies:Students must be on time each day. If you are late you must have a pass from a teacher or office staff in order not to be considered tardy to class.

Grading Policy: Students will receive a semester grade which will consist of the following:

Most supplies are provided for the students in the class. However, we always welcome any donations parents would like to make. I have compiled a wish list of items for parents if you wish to donate any to the class for ALL students to use. Most of the items listed are supplies that are used frequently or are sometimes hard to come by.
