Cookie Truffles

15 Crème-Filled Cookies / Cream Cheese, softened / Ingredient for Rolling / ¼ c. Morsels for MeltingChocolate-mint / 2 oz / Andes Mints (about 28) / Semi-Sweet chocolate
Vanilla* / 2 oz / ½ c. finely chopped almonds / White chocolate, vanilla,
Peanut Butter / 3 oz / ½ c. finely chopped peanuts / Semi-Sweet Chocolate
Lemon** / 2 oz / ½ c. finely chopped pecans / Chocolate or vanilla
*Add ½ t. almond extract to cookie dough
** Add ½ t. lemon extract or juice to cookie dough
Cookie Dough for Cookie Press
1 Cup of Flour
1 Stick of real butter (soften to room temperature)
1/3 cup of powdered sugar
1 T. Milk
Pre-mix dough before I arrive – leave at room temperature.

1 cup creamy peanut butter
1 cup sugar
1 egg

2 Step Easy Fudge
1 package milk chocolate morsels
1 can Pillsbury FUDGE chocolate frosting
OPTIONAL: ½ cup chopped pecans

Directions for Cookie Stations
Cookie Truffles:
Break cookies in half and place in MFP. Process to very fine crumbs. Add cream cheese processing until soft dough forms. (add extracts before processing) Using Small Scoop, scoop dough onto Medium Sheet Pan. Roll into balls. For chocolate mint cookies, melt Andes mints in Small Micro cooker stirring every 30 seconds. Let cool slightly then dip the cookies into the chocolate. Let stand. For all other variations roll truffle in chopped nut. Melt morsels stirring every 15 seconds. Place in small resealable plastic bag, trim corner of bag and drizzle over truffles. Let stand 10 minutes. Store truffles in airtight container in the refrigerator.
Cookie Press:
Recipe makes enough dough for 1 large round or flat rectangular baking stone of cookies. It’s roughly 12 – 14 cookies. Bake cookies at 350 for about 10 – 12 minutes. If they get brown, they are over-done. Optional: drizzle with melted chocolate or frost.
Turtles:
Place pretzel on parchment paper (either any flat stone or metal sheet pan).
Place Rolo on top. Top with Pecan Half.
Place in 350 degree oven for about 3-4 minutes. Pull out from oven and press pecan into Rolo. EASY and delicious!
Chocolate Dipping Station
Melt chocolate or almond bark in Double Boiler. Dip!
2 Step Easy Fudge
In NON STICK sauce pan, stir both ingredients over low heat until completely melted – it will become “shiny” when completely heated. Pour into 8x8 pan and let cool completely. Cut into small squares and serve. OPTIONAL: May press chopped pecans on top of fudge or mix into fudge
