Delivery / Food delivered each week via Tesco online ordering system, food stored in appropriate temperature controlled areas throughout and stored in nursery cupboards/fridge in a timely manner.
Food items checked for known allergens.
Storage

defrosting is carried out / Food stored appropriately and used in order of expiration date.
Fridge checked weekly and cleaned as per rota.
Food items stored in appropriate containers and wrapping – original wrapping kept for details.
Preparation / Individual chopping boards used for different food types.
Food prepared at designated sink area and by staff trained in food hygiene procedures.
The importance of hand washing is stressed with pupils and staff.
Disinfectant and cleaning products are used appropriately.
Cooking/Cooling / Microwave is available for heating as necessary.
Fridge used to store and cool foods. Both are checked regularly in line with rota.
Monitoring/checking and any other appropriate records used by your business / Weekly Records kept up to date
Staff training attended – food hygiene courses, infection control procedures, professional reading of current legislation and documentation.

Deliveries and labels / Food deliveries and labels are checked each week for known allergens.
Any substitution items are checked and returned if not suitable.
Staff are aware of hidden allergens.
Any new foods or those with unknown ingredients are subject to further investigation or change.
Storage / All foods stored appropriately and at the correct temperature.
Highly allergenic foods are not kept in nursery if known pupil allergy exists. Snack menus will be altered accordingly in this situation.
Air tight containers are used to store items such as flour.
Original product description is kept,
Records of all foods ordered are kept to ensure traceability.
Cross-contamination is considered when storing items.
Preparing dishes / Ingredients of all foods are known to staff.
Separate chopping boards and knives are used for each type of food and cleaned as per guidance.
When preparing food for an allergy sufferer a separate area is used, hands are washed and items disinfected thoroughly.
Staff Training / Individual allergy training carried out annually for children with specific needs – school nurse, parents deliver as necessary.
Staff CPD professional reading activity – Setting the Table document.
Nursery has a dedicated first aider.
Communicating with your customers / Allergen information posted on parent display board and added to website.
Regular liaison with parents of children with allergies.
Policy of the month will focus on food guidelines and allergy procedures at least once per session.
Snack menu items are displayed each week for parents to view.
What to do in the event of an emergency / Individual allergy plans followed in the instance of children with specific needs. Trained first aider called upon to administer first aid and 999 called for paramedic assistance,
Monitoring/checking and any other appropriate records used by your business / Record keeping -
First Aid folder kept up to date with relevant information and medicines required by children. This is reviewed each month.
Cleaning rota adhered to and fridge temperature checked as per guidance.
