Proper table maintenance includes only having what the customer needs on the table at the moment. No empty glasses, or condiments after they are finished eating. Any garbage should also be cleared from the table as it is no longer needed. This also includes any garbage on the floor around the table. A table should NEVER be billed while there are still plates on the table.

It’s appropriate after the majority of your tables have left and your side duties are all done. The table should have been just started or they should have mentioned that they are going to be staying for a while. It is not appropriate while they are waiting for food or while they are eating. THEY MUST ALWAYS BE GIVEN THE OPTION TO TRANSFER OR SETTLE UP, IT IS NOT THE SERVER’S CALL!!

What are all the rules that apply to autograts?

Autograts can only be put on tables under 3 circumstances: the manager taking the reservation must inform them that it is being put on, they are confirmed to be ESL students as their instructors have requested that we put the autograt on, or the table has approached you and asked for it to be put on. All bills that have the autograt must be circled and the customer must be made aware of it verbally. Credit cards cannot be preauthed for the total amount of the bill plus autograt, so please do not try! They must be authorized for the subtotal plus tax, and then after that the grat must be filled in manually. You can do this or you can let your guest do it.
