Big Batch Fruity Oatmeal

Ingredients

  • 6 cupswater
  • 2peeled and grated pears
  • ½ tspsalt
  • ½ tspcinnamon
  • 1 ½ cupsregular oats
  • Toppings – yogurt, berries, bananas, almonds, etc

Instructions

In a large pot, combine 6 cups water, 2 peeled and grated pears and ½ tsp each salt and cinnamon.Bring to a boil over high heat; add 1 ½ cups regular oats, and stir to combine. Reduce heat to medium-low and cook for 25 to 30 minutes, stirring constantly for the last few minutes, or until oats are tender and liquid looks creamy and starchy. Serve warm yogurt, plus favourite toppings like sliced bananas, blueberries or toasted almonds. Cover and refrigerate leftovers.

French Toast Roll-Ups

Ingredients

  • 8 slices whole wheat bread
  • 2 eggs
  • 3 tbsp milk
  • 1 tsp ground cinnamon
  • Cooking spray
  • Yogurt or cream cheese (filling)
  • Fruit and/or berries (filling)

Instructions

Cut crusts from slices of bread, and flatten bread with rolling pin. Spread desired filling on 1 side of each slice of bread. You could combine cream cheese with fruit, or peanut butter and banana. Whatever flavor combination you would love! Tightly roll up the slice of bread. Continue for remaining slices. In shallow dish, beat eggs and milk with whisk. In 10-inch skillet, spray cooking sprayto coat inside of skillet, place over medium heat. Dip each roll into egg mixture, and place in skillet. Cook in batches of 3 or 4, turning until roll is browned. Sprinkle with cinnamon, and roll until completely covered. Serve immediately.

Yogurt and Granola Fruit Kabobs

Ingredients

  • Fresh fruit chunks of choice (pineapple, bananas, strawberries, etc)
  • Vanilla yogurt
  • Granola

Instructions

Thread a piece of fruit onto a toothpick or popsicle stick. Dip the bottom half of the fruit piece into yogurt. Roll the yogurt coated piece of fruit in granola, to evenly coat. Place in freezer to freeze yogurt (optional).

Popcorn Trail Mix

Ingredients

  • 2 cups popped popcorn (unsalted/light)
  • 3/4 cup roasted almonds or roasted peanuts (if no allergies)
  • 3/4 cup unsweetened dried banana chips
  • 3/4 cup of dried berries (cranberries, raisins, blueberries, etc)
  • Yogurt Chips (optional)

Instructions

Combine all ingredients in a medium bowl. To add a little sweetness to your trail mix, yogurt chips are a nice treat! Divide into 8 small storage containers or baggies. Adjust recipe according to number of servings needed. This is great for any snack Club. Trail mix will keep about 5 days.
