Banana Muesli Slice
15 minutes preparation time, 20 minutes cooking time
Serves 12 large slices
Wet Ingredients
1 banana - ripe and mashed
1 egg
1/2 Tb spoon honey
Dry Ingredients: 2 1/2 cups of any dry ingredients you like - oats, seeds, dried fruit, nuts etc
(I have used:
1 cup oats
¼ cup pepita seeds
¼ cup sunflower seeds
¼ cup sultans
¼ cup dried dates (chopped)
¼ cup slithered almonds
¼ cup desiccated coconut
¼ cup shredded coconut
½ tsp ground cinnamon
½ Tb spoon chia seeds
Method
1. Pre heat oven to 180oC
2. Combine wet ingredients in a bowl and mix well
3. Combine dry ingredients in a bowl, then stir in banana and egg mix to bind all together. Mix until all ingredients are nicely coated
4. Bake for 20-25 minutes or until golden on top. Cool on a trying rack and cut into slices.
Banana Date Loaf
15 minutes preparation time, 25 minutes cooking time
Serves 10
Ingredients
140g dried pitted dates, chopped
½ cup boiling water
1 banana, mashed
1 egg
1 cup rolled oats
1.5 cups plain flour
1.5 tsp baking powder
¼ cup almond meal
1 tsp cinnamon
¼ cup milk
Method
1. Pre heat oven to 180oC.
2. Place chopped dates in a small bowl and cover with boiling water and let stand for 5-10 minutes, until dates have softened
3. In a separate bowl combine the mashed banana and egg. Add the softened dates and mix well.
4. In a large bowl combine rolled oats, plain flour, baking powder, almond meal and cinnamon. Add the banana, date and egg mix as well as milk and stir until just combined. Pour into a loaf tin and bake for 25 minutes or until golden brown on top.
5. Once cooked, allow to cool on a drying rack.

Fruit balls rolled in coconut
15 minutes preparation and assembly time
Makes 10
Ingredients
¾ cup (75g) dried pitted dates, chopped
¼ cup dried apricots, chopped
½ cup rolled oats
25g (7) brazil nuts
¼ cup raw almonds
1 tsp pepitas
1 tsp sunflower seeds
1 Tb spoon natural peanut butter
Dash of water, approximately 1 tablespoon
Desiccated coconut
Method
1. Place all ingredients in a small food processor or nutribullet and blend until fully combined.
2. Portion one tenth of the mixture into a ball (approximately tablespoon size) and coat in desiccated coconut. Repeat until all the mixture has been used.
