Tzatziki Dip

Ingredients
250g Greek yoghurt
½ Continental cucumber
3 Mint leaves
1 Clove
1tsp honey
Salt and pepper / Equipment
Grater
Chopping board
Sifter
Teaspoon
Large knife
Medium bowl
Wooden spoon
What to do
·  Cut cucumber length ways from top to bottom. Using a spoon remove seeds form the cucumber and put in the compost bin.
·  Coarsely grate the cucumber. Line a sifter with a chux cloth. Put the grated cucumber into the chux and strain. Tip the yoghurt on top of the cucumber, place in the fridge for 30 minutes.
·  Peel and finely chop the garlic, put to the side.
·  Wash and finely chop the mint, put to the side.
·  When the yoghurt is ready place into the medium bowl and mix in the chopped mint, honey, garlic, salt and pepper.
·  Place in a small bowl and serve with pita crisps.
