Grill & Chill Amateur Rib Cook-off

Saturday, June 18th, 2016 @ Olson Cultural Event Center in Le Mars

**We will be having 2 separate cook-offs, 1 for Charcoal/Wood and

1 for Electric/Gas.

To enter the contest, complete and sign this entry form.

1. Entry fee $25 with a $500 minimum purse plus entry fees, 100% payback.

2. Each team must provide own; Pork Ribs, cooking device and all equipment necessary for cooking.

3. Meat may not be pre-cooked, sauced, spiced, injected, marinated or cured in advance; it must all be done on sight after your ribs have been inspected at check-in.

4. Check in time is 8:30 a.m.-12:00 p.m. All contestants must be registered by 12:00 p.m.

5. Absolutely no garnish will be allowed. Any garnish will lead to disqualification.

6. Rib turn in time is: Electric/Gas 4:00 p.m. and Charcoal/Wood 5:00 p.m.

7. Sauce is optional. If used it shall be applied directly to the meat while cooking and not pooled or puddle in the container. Sauce violation shall receive a score of 1 on appearance.

8. Entries will be submitted in a numbered container that will be supplied. Each contestant must submit at least

6 separate ribs. Meat shall not be sculptured, branded or in rosettes. Aluminum foil, toothpicks, skewers or other garnish is not allowed in entry.

9. The following Cleanliness and Safety Rules will be applied:

A. No use of any tobacco products while handling meat.

B. Cleanliness of the cook, assistants, cooking device and cooking space is required.

C. Shirt/shoes are required to be worn in cooking area.

D. Sanitizing of work area should be implemented.

E. Prior to cooking; meat must be maintained at 40 degrees or less. Packed in ice.

F. After Cooking meat: Meat must be held at 140 degrees or above.

10. Once again this year “The Jammers” will be performing.

11. Coolers are allowed and electricity is available.

12. You are welcome to hand out samples; however you are not allowed to accept any kind of payment for them.

13. We will take signups until noon on the day of contest in cash payments only.
