Ingredients

¼ c. + 2 T. Oats(Quick or old fashioned is okay)

¼ c. + 1 T. Flour

¼ tsp. Baking Powder

1/8 tsp. Baking Soda

1/8 tsp. Cinnamon

¼ c. Applesauce

2 T. Milk

2 T. Brown Sugar

1 T. Vegetable Oil

¼ of an Egg

Topping Ingredients- mix all these into a little bowl and add to the top of muffin tin

2 T. Butter

2 T. Brown Sugar

4 T. Oats

Directions

1. Preheat oven to 400*F

2. Grease MINI muffin tins

3. In a large mixing bowl combine DRY INGREDIENTS:

a. Oats

b. Flour

c. Baking Powder

d. Baking Soda

e. Cinnamon

4. In a medium mixing bowl combine WET INGREDIENTS:

a. Applesauce

b. Milk

c. Brown Sugar

d. Oil

e. Egg

5. Add all the wet ingredients into the dry ingredients and mix with a rubber scraper.

6. Stir until mixed, but DO NOT over mix!

7. Fill using spoons, or a cookie scoop until 2/3 full

8. Sprinkle with topping

9. Bake for 7-10 minutes or until toothpick is inserted and comes out clean!
