1Purpose of this Equipment: To allow rotary rack style production cooking in a small compact oven equipped with a self-contained proofer.

3General Operating Specifications:

3.1Dimensions:

3.1.1Width and height are critical dimensions and cannot exceed 37 inches wide, 74 inches tall.

3.2Salient Characteristics that shall be provided:

3.2.1.1Digital or solid state time and temperature controller.

3.2.1.2Rotating interior rack or air moving system (fans) to ensure even baking.

3.2.1.3Tempered glass windows.

3.2.1.4Steam/humidity controls.

3.2.1.5Stainless steel exterior.

3.2.1.6Stainless steel or porcelain interior.

3.2.1.7Cannot weigh more than 600 pounds for hand assembly to proofer, if oven is removable. If unit is one piece than total weight not to exceed 800 pounds. (MHE is not allowed in these facilities)

3.2.1.8Automatic humidity, air and water controls.

3.2.1.9Castors: Minimum of two locking, two swivel.

3.2.1.10Minimum 12 pan capacity.

3.2.1.11¼ inch NPT water inlet.

3.3Industry Standards / Requirement(s):

3.3.1Industry Standards: Underwriters Laboratory (UL) listed and National Sanitation Foundation (NSF) certification, or approved equivalent.Conformité Européene

3.3.2Warranty period shall be for (1) year from date of delivery against defective material and workmanship and shall include parts, service and labor.
