Women and elderly people are served first out of traditional courtesy unless the party consists of a host or hostess entertaining friends. In that case, the party begins with the guest of honor at the host’s or hostess’s right. Continue serving around the table counterclockwise. If you have taken the order correctly you will never have to ask the guest what he or she has ordered as you serve. Serve all foods, such as appetizers, soups, salads, entrees, and desserts, from the left of the guest with your left hand. Support the dish with your fingers underneath the plate and your thumb on the rim, and place it in the center of the cover. Using your left hand may take practice if you are right-handed, but the left-handed serve eliminates the possibility of elbowing the customer.

A staff can be mindful of safety, but cannot prevent all fires, storms, or electrical blackouts, nor predict when someone in the restaurant will become injured or seriously ill. The staff’s main responsibility is to encourage everyone to remain clam, to control panic and confusion, to have a plan of action, and, hopefully, to prevent serious consequences.
