Vegetable Stir Fry

Vegetable stir fry

Ingredients:

½ head broccoli

1 large carrot

½ can water chestnuts

1 onion

½ red pepper, or any colored pepper

½ bottle stir fry sauce

Salt & Pepper to taste

¾ C. rice

2 T. butter

Directions:

1.  In a sauce pan, put 3/4 C. of rice and 1 & 2/3 C. of water. Get to a boil and then bring temperature down to a simmer. Keep lid on pan and let simmer for about 20 minutes. Be sure to taste the rice to make sure it is cooked all the way through. You may need to add more water.

2.  In sauté pan, melt butter at a medium heat.

3.  Cut up all vegetables into bite size pieces. First cut carrots and add to pan, then the onions, peppers, water chestnuts and broccoli. (You should only use the flowerets or top part of the broccoli, just break off pieces with your fingers.) Vegetables should be done in approximately 10 minutes.

4.  Add in stir fry sauce once the vegetables are tender.

5.  When rice is complete, add into sautéed vegetables and serve. Add salt and pepper to taste.
