JOB TITLE: Assistant Butler

OF WORK: Hall, Combination Room, Servery, Upper Hall, Henry Cavendish Room, Parlours, Master’s Lodge, Theatre, Lubbock Room, Plevy Bar, Nightingale Room and other conference and dining areas in the College

RESPONSIBLE TO: Senior Butler, Head Butler, Catering Manager, Manciple, Steward

RESPONSIBLE FOR: Part-time Service Staff

1. Context & Nature of the Job:

Peterhouse is the oldest of the Cambridge Colleges and has approximately 60 Fellows and 400 Junior Members. The Assistant Butler is one of the team of Butlers at Peterhouse who provide meal service to Fellows, Students and guests of the College, as well as caring for conference delegates and other external events throughout the year. The role requires a meticulous, practical, hands-on approach. At certain times the Assistant Butler will be responsible for the management of part-time Service Staff.

2. Duties & Responsibilities:

a.  To provide the highest level of food and drink service to the Fellows and Students of Peterhouse, and to all other functions taking place in the College.

b.  To maintain the standards, traditions and ambience of the dining areas and function rooms in the College.

c.  To prioritise and complete daily tasks in an efficient manner.

d.  To set and clear conference and dining rooms for use as required.

e.  To assist and supervise the day-to-day running of food service to those using the Servery.

f.  To assist, as required, in the timely ordering and management of provisions for the Servery.

g.  To supervise the smooth service of Formal Hall.

h.  To develop a basic working knowledge of the Formal Hall booking system and till system.

i.  To assist in the cleaning, care and safe keeping of the College silver.

j.  To respond, as required, to electronic requests from those wishing to dine, to answer them accordingly and to ensure their request is met.

k.  To assist in the processing of internal College charges for Fellows meals and their guests.

l.  To ensure that the Catering Manager receives all information necessary to process billing in a timely manner.

m.  To assist in the preparation of conference rooms, and the service of refreshments to conference delegates, and when required to provide AV / IT support at a basic level.

n.  To liaise, as required, with the Conference Manager regarding the requirements of Conference events.

o.  From time to time the post holder may be asked by the College to perform any other duties appropriate to this post.

3. People/Management:

a.  To liaise with Chefs and kitchen staff as required to ensure excellent internal communication.

b.  To ensure the most effective use of part-time service staff during their employment.

c.  To assist in the training of service staff in best practise in service methods and hygiene standards.

d.  To promote high standards of service from waiting staff effectively and with courtesy.

4. Environmental Health:

a.  To adhere to health and safety and food hygiene regulations and procedures.

b.  To report possible hazards and/or equipment failures and accidents to the Catering Manager.

c.  To observe COSHH regulations and risk assessments, as required.

d.  To be responsible for the hygienic maintenance of all work environs within the College.
