Hot Skillet Pizza

-This is a quick pizza recipe that is really simple to make.

-The homemade ricotta cheese is totally optional the pizza is amazing even without it.

-This dough is made using only tapioca starch.

-You can add pretty much add anything you want and as much as you want on top of the pizza this is totally up to you.

-You can also add some fresh or dry herbs in the dough to give even more flavour to the pizza.

-I will include a pizza sauce recipe here if you don’t already have one.

Preparation

Makes 2 small pizza

Prep Time: 20 min. + 20 min if making pizza sauce

Cooking time: 15 min.

1 ½ cups tapioca starch;

½ cup of coconut milk;

2 tbsp. olive oil;

1 egg, beaten;

1/4 tsp. dried oregano or basil;

Sea salt and freshly ground black pepper;

Pizza ingredients

Red onions, thinly sliced;

Bell peppers, chopped;

Cherry tomatoes, chopped;

Pepperoni, thinly sliced;

Ricotta cheese; (optional)

Pizza sauce;

Pizza Sauce

1 garlic clove, minced;

1 big shallot, minced;

2 cups of tomato puree;

1 tsp. oregano;

1 tsp. dry basil;

1 tbsp. olive oil;

Sea salt and freshly ground black pepper;

Preparation

Pizza Sauce

In a saucepan heat olive oil over medium heat and add the minced shallot and the garlic and cook until soft and golden about 2 to 3 minutes.

Add the tomato puree, oregano, basil, and season to taste.

Lower the heat and simmer for 20 minutes.

The Pizza

Preheat oven to 450 F.

In a big bowl combine the coconut milk, the water, and the olive oil

Add the tapioca starch and mix everything together, it will be lumpy.

Add the beaten egg to the coconut milk mixture and mix with your hands until you get dough like texture incorporate the oregano and season to taste while mixing the dough.

Split the dough in half, and place half the dough between two pieces of wax paper and flatten it using a rolling pin as thinly as possible for the size of skillet, keep the other half of the dough for another pizza.

Place the flatten dough in a cast iron skillet and poke some hole with a fork.

Place in the middle of the oven and cook for 7 minutes.

Remove skillet from oven and add the pizza sauce and your topping. (This is the part where you can go all out)

Place the pizza back in the oven and cook for another 10 to 12 minutes, or until you see the topping are nicely cooked, you can put it on broil 2 to 3 minutes if you want crunchier topping.

Serve warm!
