STA Concession Opening Items
Wash hands when 1st entering concession stand & every time you leave & re-enter.Nachos:
- Plug in machine right when you arrive if it’s not already plugged in.
- Use remainder of the cheese bag from the cooler and put another full bag on top of the other bag. (this makes it easier to get the cheese out of the bag)
- Leave cheese plugged in unless it’s the last game of the weekend.
Hot Dog Cooker:
- Turn cooker on with the “ON” switch
- Turn both heat dials to “HI” And roller switch on
- Machine has two heat zones. Blue =Front Red= Rear
- Use hot dog tongs to put hot dogs on the rotating cooker
- Hot dogs and buns are located in the cooler if no hotdogs are in the cooler transfer from freezer to cooler.
- Remember to put hot dogs back in cooler.
Games
Initial hot dogs to put on the machine / 15 / 10 / 10 / 8
After 10 minutes put additional hot dogs on cooker / 10 / 10 / 0 / 0
After first bunch have hit 140-160 deg F place this many more on the machine / 5 / 0 / 0 / 0
- After first round of dogs have reached 160 (approx 20 minutes)move dogs to Frontof cooker and turn blue zone to med/low heat. Start 2nd bunch of dogs on rear zone with high heat. Once 2nd batch reaches 160 turn down heat to low. Before end of period wrap a few hot dogs and place in metal container next to hot dog machine.
- Note: If hot dogs are needed prior to reaching 160 degrees microwave 15-30 sec to reach desired temp.
Pretzels
- Pretzel should always be kept frozen
- Make sure the 2 water containers on the botton of pretzel machine are full with distilled water found on back shelf. If no distilled water used regular water.
- Turn on the heat to 170 degrees
- Put frozen pretzels into the pretzel machine about 15 minutes before game. (they tend to get hard if in warmer too long)
Games
Initial Pretzels / 10 / 7 / 5 / 7
- They will warm to a good pretzel in about 15 minutes
- If additional pretzel(s) are needed, place 1 in microwave for 45 seconds to warm when ordered.
- Pretzel Salt: Put salt on ½ pf pretzels. Do not put pretzel into salt container. Take paper plate and put some pretzel salt on it, with gloves on spray pretzel with water dip onto paper plate and place back into pretzel machine.
Popcorn Machine
1.Turn heat and agitator on.
2.Take 2 bags of popcorn & warm up in microwave for 45 seconds each bag. (This softens the butter to make it easier to get out of the bag.
3.Place popcorn and butter in machine. BE SURE TO CLOSE THE LID ON THE POT
Note: When popping, bottom silver door must be pulled out or popcorn will be thrown out onto the floor.
Hot Chocolate, Cappuccino, Apple Cider
1.Make sure that 12oz. Caribou cups and brown lids are stocked by machine.
2.Open front of machine to verify all 3 compartment are at least half full by opening the front panel which swings out to the left. Lightly tap/shake the plastic containers to move the mix to the bottom of the dispensers.
3.If mix is needed, lift up on the top metal lid of the machine and remove the top plastic lid for the container(s) that needs replenishing.
4.Add additional mix (located in boxes directly below the machine).
Test by depressing the green dispenser button to see that the cappuccino or cocoa is dispensing and not just hot water.
Regular Coffee Machine
1.Make sure that 12 oz. Caribou cups and brown lids are stocked near machine.
2.Turn on the “on/green” switch and wait about 3 minutes for water to heat up.
3.Pull out metal basket and place a coffee filter inside basket (filters and coffee are located in boxes directly below the machine or on storage shelf).
4.Use scissors to cut open coffee pouch, dispense into coffee filter.
5. Slide basket with filter and coffee back into the machine.
6.Position one of the coffee carafes directly below the basket.
7.Once the “ready to brew” light is lit, depress the “brew” switch (top right). Only depress once.
8.Once filled, replace the metal parts, close the lid by pushing firmly on the top, position the small metal lever so the top dispenser operates properly

10.Make 2 pots of regular coffee & 1 pot of decaf coffee.
During the 1st period you may need to do more depending upon how they are selling.
Slushie Machine: DO NOT ADD SLUSHIE BASE STRAIGHT TO MACHINE ONLY PREMIX
1.Check fluid level on front of the machine. If fluid is close to the min line, add slushie premix (located in plastic premixed jugs on top shelf in refrigerator) by lifting up on the lid on top of the machine. Pour red or blue slushie premix into appropriate opening. Close the lid.
2.Rinse out empty container of premix and mix new batch.
HOW TO MIX BATCH
a.Fill plastic bottle to bottom black line with mix (located bottom shelf in cooler or rack behind sink.)
b.Fill to next line with water, and then shake to mix it up and place in cooler.
Register Key to register can be found in lower metal tray of hot coco machine pull tray forward.
- Turn key to REG
- Hit “No Sale” button on register. Door will open
- Count cash in both cash register drawers and record the date, the amount, and your name on register log sheet that is kept behind the candy stand on the brown table. This total should match the last entry. Do not include quarters (loose or rolled) in your count.
Other
- Ledge to the left of the concession stand needs to placed out.
- Place condiments out on ledge to the left of the concession stand.
- Condiments are ketchup, mustard, jalapeños & sweet relish (back cooler) coffee items: creamers, sugar, artificial sweetener, stir sticks.
- Re-stock pop cooler with cold pop from pop cooler in back room if needed.
- Put the “concession stand open” signs on the 3 vending machines.
- Turn off switches in fuse box for candy & pop machine only (#22 & #24)
