Special Indian Tomato Sauce

Extra virgin olive oil

¼ Cup onions, chopped

3 cloves garlic, minced

½ teaspoon fresh ginger, chopped

1 ½ teaspoon ground coriander

1 ½ teaspoon paprika

1 ½ teaspoon ground cumin

½ teaspoon salt

3 cinnamon sticks (whole)

3 bay leaves

2 large cans diced tomatoes (no salt added)

Sauté onions and garlic in olive oil until onions are translucent.
Add spices and sauté to coat onions.

Add tomatoes mix well and simmer on low to medium heat until thoroughly heated and flavors are melded.
