Affectionately referred to as “hippie dust” by self-identified “granola” types, nutritional yeast is a super cool seasoning that's amazingly tasty and goes on, and in, just about everything. But dig this: it's far from devoid of nutrients(hence the 'nutritional' in the name) and has a groovy almost-nutty, cheesyumamiflavor.
HOW IT’S USED
You'll find itin flake and powder form. They're pretty much interchangeable, the flake form is just less compact so you'll want to use a little more than you would with the powdered variety. Both tend to be a bit drier than cheese, but you can add a little olive oil if your food isn't real moist.
“Hippie dust” isn'tpsychedelic, but it IS rather magical since it transforms nearly everything you add it to.It's often seen as a parmesan cheese substitute, and it's outta sight for that, for sure, but don't think it ends with a little sprinkle on pasta and pizza. THE FIRST DOZEN WAYS YOU NEED TO TRY IT
1. Popcorn
This is the gateway application. You’ll get a good sense of its magic when you sprinkle it on popcorn. You might even ditch the salt!
2. Pesto
Basil, parsley, lemon juice, salt, garlic, nutritional yeast, extra-virgin olive oil and, for a different vibe, walnuts.
3. Kale salad
Mix some hippie dustintoolive or avocado oil, lemon juice, garlic and soy aminos, and massage it intotorn kale leaves(no stems, man).
4. Kale chips(totally different experience than the salad)
Toss torn kalewith olive oil, then shake on some nutritional yeast and garlic powder, and bake.
5. Caesar dressing

6. Mac & cheese
Fills in for cheese in the sauce —and you don’t need as much. Mix it up smooth in a blender or processor with some non-dairy milk, a starch and your other favorite seasonings (optional).

Same concept as above. For broccoli, nachos, whatever turns you on.
8. Potatoes
Mashed potatoes go 3-D with a little hippie dust. For a dairy-free version, ditch the butter and milk— use extra-virgin olive oil instead.Bake nutritional yeast into au gratin and party potatoes, too.
9. Eggs
If you dig 'em over-easy,sprinkle it on top, but it'd be a drag if you didn't try it mixed into scrambledeggs or tofu.
10. Risotto
This stuff makes far out cheesy-like risotto.
11. Soups
Works great in a roux to thicken soups, or as a finishing mix-in for added flavor.
12. Gravy
