JOBPURPOSE:Lead,motivateandsuperviseasmallcateringteam.Responsible

formenuplanning,foodstorage,preparation,production,cookingandservice;whileworkingwithindeadlinesandtorequiredstandardstoensurecustomers’satisfaction.Workwithintheoperatingbudgetusinglocalnominatedsuppliers that offer the best value for money and are in line with the charity’s values.

MAINDUTIESANDRESPONSIBILITIES:

1. Haveaccountabilityforthedaytodayrunningof thekitchenandcateringservice,andtoensurethatthefoodoperationsarecontrolledinamannerwhichreachesthedesiredcostofsales,maximisingpotentialandoptimisingresources.

2. Ensureeffectivecontrolofstockpurchasing,receipt,storage,preparationandservicewithregardstoquality,quantityandsafety.

3. To empower and manage thedesignofseasonalmenusandtopurchaseallfoodandfoodrelatedproductsusingnominatedsupplierstoachievefoodbudgetedcostcontrols,ensuring

minimumwastagewithinthevenueandtoensureallmenusarecostedaccurately.

4. DevelopmarketingandadvertisingplansinlinewithPRprocedures,whichyouactivelypromotetodevelopthenewbusinessandpromotetolocalandtouristcustomers.

5. Monitorandmaintainconsistentfoodstandardsandqualityacrossallareasandduringallstagesofproductionandsupply.

6. EnsuretheHACCPproceduresaccordingtotheFoodSafetyManagementPolicyareinplaceandmaintained,andthecorrectimplementationofcleaningrotasandclosingdownproceduresareadheredto.Ensurequalitycontrolmeasuresand

hygienesystemsareachievedatalltimes.

7. Maintainallequipmentwithinthecateringoperationthroughduecareanddiligence.Ensuringengineercalloutsforallrepairsoncateringequipmentareeffectivelymanagedensuringthebestlifeofallkitchenequipment.

8. Ensurestaffaretrainedinaccordancewiththeirlineofresponsibility,includingworkmethods,safetyatwork,health,hygieneandquality.

9. Timesheetsaresubmittedtopayrollontimetoensurestaffarepaid

inatimelyandefficientmannerandwagecostsarekeptwithinagreedallocatedbudgets.

10.Recruitandselectkitchenpersonnelinlinewithrequiredrecruitmentprocedures,workingwithyourlinemanager.

11.EnsuretheHealthandSafetyPolicyisfullyoperationalinallareasofresponsibility12.ArrangeCOSHHtrainingforallstaffasrequiredusingthenominatedsupplier

forchemicals,sothatstaffareawareofthedangerofthechemicalsweuse.13.EnsureallstaffaretrainedtoBasicfoodhygienelevelasaminimumsothey

canassistinfoodpreparation.

14.Thepostholderwillundertaketraininganddevelopmentasappropriateandkeepup-to-dateofdevelopmentsinhis/herfieldofexpertise.

15.Customercomplaintsareswiftlydealtwithandfeedbackwithexplanationstoyourlinemanager.

16.Ensuresecurityisadheredtoatalltimes.

17.Takeeveryopportunitytoobtaincustomersfeedbackandbuildonconstructivecomments,toensurecontinueddevelopmentofmenusandservice.
