NOTE: These weights are an indication of the raw weight, i.e. before being cooked.

ENCHILADA

The 3 options available are: beef / chicken / veg (mushroom).

The 2 size options availableare: half (75g of meat/mushrooms in 1 tortilla) or full (150g of meat/mushroom in 2 tortillas).

The beef strips ORchicken strips OR fresh button mushrooms (quartered) and sliced onions are fried on the flat top grill with a sprinkling of seasoning salt.

Chillies may be added if a spicy meal is ordered (optional).

This mixture is rolled in heated tortilla(s).

The tortilla(s) are covered in Mexican sauce and grated cheese, then placed in the salamander (oven) until the cheese melts.
Served on a skillet board with salsa, guacamole, sour cream and Mexicanrice.
Garnished with shredded lettuce and diced tomato.

FAJITAS

(Pronounced FA-YEE-TA)
The 3 options available are: beef / chicken / mushroom(vegetarian).

150gbeef strips / chicken strips / button mushrooms (cut into quarters) are fried on the flat top grill with a sprinkling of seasoning salt, assorted peppers slicedonions. Add chilies if the customer prefers a spicy meal.
Served with 3 warmed tortillas in tortilla box.
Served with salsa, guacamole and sourcream.
Garnished with shredded lettuce, diced tomato and gratedcheese.

QUESADILLAS

(Pronounced KA-SA-DIA)
2 different options are available on the menu: cheese ORchicken & cheese However, beef strips may also be offered.
75g grated cheddar cheese is spread onto onetortilla and heated, allowing the cheese to melt. If the customer wants the chicken (or beef) & cheese option, then 75g of chopped, cooked chicken (or beef)is added. Another cooked tortilla is then placed on top of the first and cut into 4 equal triangles.

Add chilies if the customer wants it hot/spicy.
Serve with salsa, guacamole and sour cream.
Garnish with shredded lettuce, diced tomato and a sprig of fresh parsley.
