Winemaking

The grapes were cold macerated at 8ºC on their skins for one week then selected yeasts were added prior to fermenting at 20 – 23ºC in stainless steel tanks. Once alcoholic fermenting ended the grape skins were removed and wine was moved to another tank for malolactic fermenting. Upon concluding MLF, 30% of the wine was aged in French oak barrels for one month. Finally, the wine was blended, cold stabilized, filtered and bottled.

Tasting Notes:

Bright ruby-red colour with shades of caoba. This wine displays typical varietal aromas including black cherry, forest floor and pomegranate. This elegant Pinot Noir has fruity strawberry and cherry flavours that combine with a touch of spicy oak and a long, pleasant finish.

Accompany with fresh pasta Bolognaise, baked salmon and caesar’s salad.
