JOB DESCRIPTION

COOK, TRADING AND SERVICE CO-ORDINATOR

The café on the ground floor of the Greenhouse exists for two key purposes. Firstly, to raise income to fund the environment education objectives of the Greenhouse (charitable) Trust . Secondly, to bring people into the building to benefit from the environmental educational activities of the Trust, including the many issues relating to sustainable food production and sustainable resource use, as demonstrated within/by the building.

The Company is looking for a cook, keen to engage with the organic principles that underpin the services and education work here. You will need to be someone committed to ensuring the delivery of the services and want to be involved with organic food issues.

As cook and service co-ordinator you will be delivering a friendly front of house service and all the related food services. You will work with volunteers, providing training and supporting volunteers in the delivery of a set menu. Food is prepared on the premises using local organic vegetables from Folland Organics and organic and Fairtrade goods from Suma (the UK's largest independent food co-operative).
You will need to demonstrate clearly your ability to run the Café as the sole member of staff, working with our without volunteers. The number of covers in any one day ranges from 20 – 60, with Saturday generally being a key trading day. It is expected that Saturdays will one of your working days, with the other days, dependant on your rotaring of volunteers and the other casual staff members.
The Café is open 10am- 4.30pm Tuesday-Friday, 10am-5pm on Saturdays. The Greenhouse holds evening and weekend fund raising/educational events, including vegan/organic wine tastings and private views for the gallery on the first floor. The Trust and company are keen to develop these wine and food events as part of our eco-agriculture/healthy food education work. You will be expected to have a keen interest and/or knowledge of these issues.

You will generally work on your own, with one volunteer (optional). Plus an additional member of staff on busy days.

In particular, you will:

1.  Produce cakes and savouries that deliver the advertised menu.

2.  Keep the kitchen and café clean and tidy at all times, with clear work surfaces and all glasses cleaned and polished and available for the following staff member.

3.  Ensure that the display counter is well presented and operational throughout the day and the drinks cabinet is full at the start/end of the day.

4.  Oversee stock and portion control and minimisation of food waste, including the use of prepared food and the use of shop stock approaching its ‘best before’ date.

5.  Audit the fridges, freezer and pantry in order to maintain the delivery of the menu and drinks.

6.  Use the stock systems in order to maintain supplies, for eg: bread, milk & vegetables.

7.  Plan your work with the whole week in mind, in order to support the needs of the next day/s staff members

8.  Communicate with other staff members, orally or in writing as appropriate, in order to maintain the rota and delivery of all aspects of the menu/services.

9.  Recruit, train, supervise and involve your volunteers in appropriate aspects of food preparation and service.

10.  Take responsibility for the safety and maintenance of the equipment in your care and immediately remedy or notify any problems with equipment.

11.  Operate and efficiently manage the cash and card payment systems.

12.  Ensure that the kitchen and food production complies with all necessary hygiene requirements.

13.  Promote the menu, and the environmental and social reasons underpinning organics, including, via social media.
