Term 2 Weeks 8 and 9 2011

Read a variety of books and information including school books
Read for 20 minutes each night.
Premier’s Reading Challenge – Make sure you enter the books you read online. / Be read to by another member of the family
Ask your family member to read you a newspaper article about an interesting topic or current affairs issue.
Record the name of the article, the newspaper and give a two line summary. / Shopping with parents
Make a list of all the ingredients you need to buy to make the muffins of your choice. Remember to check the cupboards for ingredients before going to the shop to buy what you need. What is the total cost of all your ingredients?
Physical activity / Housework
Make muffins using the supplied recipe (or use your own recipe). Make sure an adult is there to supervise you when you place your biscuits in or out of the oven.

Choc Chip Banana Muffins

Ingredients (serves 12)

  • 60g butter
  • 2 cups self-raising flour
  • 1/2 cup caster sugar
  • 1/2 cup milk
  • 2 eggs
  • 2 ripe bananas, mashed
  • 1 cup (200g) Nestle Dark Choc Bits

Method

  1. Preheat oven to 200°C. Line a medium muffin tray (12 sections) with paper cases. Melt butter in a small saucepan or heat-proof bowl in the microwave. Set aside to cool slightly.
  2. Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
  3. Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined. Stir in choc bits. Don't beat the mixture or the muffins will be tough.
  4. Spoon the mixture evenly into the muffin cases. Bake for 20 minutes or until firm on top when lightly touched (get an adult to help with this). Leave in the tray for 3 minutes. Transfer the muffins to a rack to cool.

Banana, Honey & Cinnamon Muffins

Ingredients (serves 12)

  • Melted butter, for greasing
  • 2 cups (300g) self-raising flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • Pinch salt
  • 1/2 cup brown sugar
  • 75g butter, melted
  • 1/2 cup (125ml) milk
  • 2 tbs honey
  • 1 tsp vanilla essence
  • 2 eggs
  • 1 cup mashed banana (about 2 bananas)

Method

  1. Preheat oven to 180°C. Grease 12 x 1/3 cup (80ml) muffin pans with melted butter or line with paper cases.
  2. Sift flour, baking powder, bicarbonate of soda, cinnamon and salt into a large bowl. Stir in sugar.
  3. Combine melted butter, milk, honey, vanilla, eggs and mashed banana in a large jug. Whisk until well combined.
  4. Make a well in the centre of dry ingredients. Add egg mixture, stir until just combined (do not over mix). Spoon mixture into muffin pans. Bake for 20 minutes or until cooked through when tested with a skewer. Cool in pans for 5 minutes, turn onto a wire rack to cool.
