The meeting was called to order by Mary Borg (Chair) at 1:00 p.m.

  1. Approval to Audio Record Meeting

Mary Borg informed the attendees that the meeting would be recorded to assist with minutes.

  1. Approval of minutes from October 21, 2014

Motion to approve the minutes from last meeting was made by Terri and seconded by John. Motion was passed by unanimous vote.

  1. Ratification of Vice Chair

Vince informed the committee that President Delaney formally named Terri as Vice Chair of this year’s Council.

  1. Facilities Report

Vince mentioned this is the time of the year when pricing plans are adjusted per the CPI. This year the CPI is around 2.3% so a slight adjustment will be made as a contractual addendum.

  1. Fall Survey Results

Danielle reported that there were a total of 1,098 surveys completed during fall term. She informed the committee that results showed a campus-wide average of 3.93 out of 5. UNF is ranked higher in all categories compared to the company average of other Universities. Some specific rankings included Overall Cleanliness of Dining Facilities at 75% and Staff Friendliness/Courteous at 80.5%.

  1. Operational Report

Korey Konopasek discussed the updates of the Test Pilot program UNF is using where new packaging now has more nutritional information on the label. Unit managers are rotating the different items and menus to keep a variety and interest for the students. Individual unit sales have increased 30% since the start of the program in January. The program is at Harvest Moon Café, Ozzie’s, Pita Pit and both Outtakes.

Korey mentioned about a new online culinary art school that gives a certificate to managers or associates who want to take classes from basic skills to techniques that can be used in the kitchen. There are classes also for sanitation and how to properly use and clean equipment. These classes are available to any associate for furthering their knowledge and provide opportunities for promotion/advancement.

Danielle and Dave reported on sales on campus. Overall campus sales are up 9.2% or $987,950. In Alumni Square sales are up $104,744 compared to last year. Chop’dWrap’d and Chick fil-A have an increase in sales by 16.9% and 26.8%, respectively. The Outtakes in Alumni Square had a decrease in sales of 8.4%. Sales in Starbucks are down by 6.3%.

Total sales in the Student Union are down by 12.3% or $166,968. This is due to the impact of Chick-fil-A and Pita Pit. Boathouse sales are down 7.6%, Chick N’ Grill down by 5%, Coyote Jacks down by 7.5%, Quiznos down by 29.1% and Papa Johns down by 18.4%. Total sales in the Housing Areas are up by $697,142 with the addition of Pita Pit. Sales in Ozzies were down 27.9% however Pita Pit brought in $909,856 to shift the sales from Ozzies to Pita Pit. Total sales from residents in Osprey Café are up 8.5% or $400,000. Catering at the University Center increased by 1.4% and on campus by 6.1%
